I AM POOPED!!!! My week is proving to be a challenge. Something happens when you know you are leaving for a week of bliss and you still have to get through several days of work! UGH 😦 I have to work a half day tomorrow and Friday and then I am out of here! Is Friday EVER going to get here?

I don’t know if I mentioned that we (my hubby and I) are headed to Florida-I mean I know I said we are going to the beach, but I didn’t say where. Of course I HAD to get online and see if there is a Whole Foods anywhere within driving distance. I’m willing to go pretty far, but I don’t think the hubby would like it. Anyway, I am happy to report that there IS a Whole Foods about 25 minutes from where we are staying. Twenty Five minutes is nothing when you live in the country like I do. I’m thinking anniversary dinner at Whole Foods–just kidding 😉 I WILL however eat there at least once and do some shopping.

I just got back from an appointment with my ND. We are trying some new natural stuff for my hormones etc. I haven’t really shared much about all that stuff but my OB/GYN had put me on Vagifem (even though I am not post menopausal yet). She said that it wasn’t absorbed throughout my whole body so it should be perfectly safe. After MUCH reading about it, I have decided I want to stop using it. I have nothing against anyone who chooses to use it, I just don’t feel it is best for me. I’m really praying that the natural stuff will do the trick.

We also talked about oxalates and how they may be affecting my female problems. I have been doing TONS of research about oxalates and found it very interesting that some people with digestive disorders tend to absorb too many oxalates. It’s amazing what all a defective gut can affect! Anyway, the verdict is–watch oxalates pretty closely, but can have higher oxalate foods occasionally. I also learned that if I am going to eat high oxalate foods, I should make sure and drink plenty of water before and after eating to help flush the oxalates out. I haven’t had spinach in DAYS!! I did have some raw almonds today but that was the only food relatively high in oxalates that I had.

Sorry this is a boring pictureless post, but I haven’t even been able to think about stopping to take pictures–just trying to get through my days!

Whew! I had a busy weekend! How about you? Saturday we went to my father-in-laws 60th birthday party–no pics–forgot camera. I had a good time, but ate things I shouldn’t have. Hey, my belly was already a wreck so I took my meds and went for it. Sunday was a potluck after church. I did NOT cheat that day–yay for me. I only had a little salad and had something else when I got home. 

As busy as my weekend was, my week is about to explode into major busyness. I have a busy work week, but the best part is that my middle son is turning 18!! My other two are 19 and 14! Good grief I feel SO old!! We are having to put off the party for a bit though because… 

My hubby and I are leaving Friday for our 2oth anniversary/2nd honeymoon!!! We will be gone for a whole week with no teen drama, no work, just lying around on the beach and relaxing. We are planning a big birthday bash for when we get back. I am SO looking forward to a vacation. I’m sure I will miss my youngin’s terribly though!! It will be weird to not have them around. My husband and I have never gone anywhere for a week without them–except once (went to Nashville and met Heather) and that wasn’t really a vacation for the hubby because it was for work. I on the other hand had a great time–HI HEATHER 🙂 

Okay, so on to food. I am back into sprouting! 


I experimented with sprouting some last year and thought it was pretty cool and easy. But, the main reason I did it was for digestion.  I am SO stubborn that I just keep trying grains and they just keep NOT working. I am sprouting some quinoa, buckwheat and oat grouts to see if I can handle sprouted grains any better. Not sure if it’s going to work though. I’m also sprouting mung beans and broccoli sprouts. 

Remember the buckwheat pancakes I used for bread the other day? Well, I had the pancakes for breakfast the next morning.

 Buckwheat is not technically a grain but my belly did NOT appreciate this! Sad 😦 And, I have also realized that I may need to go on a low oxalate diet to help my female issues. I’m waiting to hear back from my ND as to whether this is something I need to try. Believe me, I don’t want to do it if it isn’t absolutely necessary. I don’t want to go into a lot of detail, but some of my main foods that I depend on are VERY high oxalate–like spinach, almonds/almond milk, stevia and chocolate–heaven forbid!! There may be some major changes to my diet coming soon, but I am choosing to just focus on today 😉 Worrying about what may be coming is a waste of my energy.

I was so temtped to call this post ‘O Happy Crappy Day’! My day started bright and early at 4:30am when I woke up and could not go back to sleep. By 7:30 I already felt like I had put in a full day’s work! I chose to skip my morning walk because I had two houses to clean today and my poor little Samson  has been under the weather yesterday and today. I think he is on the mend, but if he isn’t better by tomorrow, we shall take a trip to the vet.

Thankfully, my day got better as it went and I actually took pictures of all of my food today–well almost. At 6:30am I was STARVING but I didn’t want to eat my real breakfast then. So, I had my last piece of ‘More Than A Meal Bar’. I am going to figure out a way to make those suckers–they are $7.50 a piece and I ate mine way too fast–4 days 🙂

For my real breakfast I ate:

1 egg + 2 whites, almond flour zucchini muffin

I got the muffin recipe from the book ‘Dr. Mercola’s Total Health Program’. I really like that book and I LOVE the muffins.

After cleaning a house for an 86 yr. old client whom I have become pretty fond of, I came home for lunch and had this:

I found a new dressing the other day that I used for the first time today.

I am NOT motivated to make my own dressing and was really pleased with this gluten free roasted garlic dressing!

Oops–almost forgot my dessert!

I don’t think a day EVER goes by without me having something sweet! I think every tooth in my mouth is a sweet tooth!

After lunch, I went to clean my brother’s house–which is brand new and makes me want to live there 🙂

For snack, I had a little problem with my yogurt.

I was going to eat the WholeSoy yogurt and when I tasted it, it was awful!! I think it was spoiled even though the date was still good. I hate it when stuff like that happens. So, in the trash it went and I ate the rest of my Wildwood yogurt. I like the Wildwood and it is what I normally eat, but I found the other on sale–now I know why! I have gone back and forth about the whole soy debate, but having to be dairy free, I have decided that a little soy is not going to kill me.

I used Healthy ‘N Fit egg white protein powder in strawberry passion flavor. I REALLY like that brand of protein powder! It is ONLY sweetened with stevia which is a huge plus in my book! I had vanilla ice cream flavor before and just recently ordered the strawberry.

By dinner time, my early morning was really getting to me! I almost fell asleep driving home. I was too lazy to fix anything difficult–so this is what I had (while trying to watch a netflix movie that refused to load):

I really wanted something else a little while after dinner, but I have gotten in a bad habit of eating too late in the evening. It is usually NOT because I’m hungry but just because I want to munch. I am trying really hard to stop eating by 7pm. Of course, if I’m really hungry I will eat something else, but I think my belly feels better when it isn’t full at bedtime.

 That is a pretty typical day for me–most of the time. Sometimes, I eat some grains, but I don’t really do well with them. My ND suggested that I have 1 serving of grains every three days. Yeah right! If I have grains, I only want more grains. Then I feel icky, bloated and depressed!

I have dishes calling my name, but honestly, I think I am ready to crash! Hope you all had a wonderful day 8)

Hello all! Man, I can’t seem to get back into the swing of things here. I have gotten SO out of the habit of taking pictures of my food! I did want to share this interesting bar with you though.

Is that sucker huge or what?! It is a “More Than A Square Meal” bar.Of course, this is not meant to be consumed at one sitting 🙂 The paper that came with this bar stated the following:

  ” Each ‘More Than A Square Meal’ bar can be consumed as many seperate protein and energy bars, as a large number of tiny but nutrient packed meal components (servings) or as several complete, high protein, high energy morning meals.”

The bar is loaded with protein because it is loaded with Hemp Seeds. There are only three ingredients: hemp seeds,bittersweet chocolate, and topped with nuts, dried fruit or coconut. I chose the one topped with almond, but there was also blueberry, strawberry, and coconut at the store I found it at.

So, how does it taste? YUMMY!! I didn’t eat half of the bar at once and even shared some with my brother, but I REALLY liked it–a lot! You can read more about the bars and the benefits of hemp seeds here.

I mentioned in my last short post that I was headed to get my ear restapled.

I ended up getting both ears done. The staples are supposed to last 3-6 months. One of mine had been in 6 months and the other for 3, so she went ahead and replaced them both. They were a little more painful this time, but today is day 3 and they are feeling much better.

You may be wondering how I can tell they need to be replaced. I’m going to be very honest here and tell you that I have struggled with depression off and on for years. Sometimes, I wouldn’t even realize that I was depressed, but would wake up and immediately feel like I was going to throw up. My ND mainly put the staples in to help with perimenopause symtoms–and poof–NO MORE feeling sick in the morning!! I know it sounds weird and it IS amazing that they can work like that, but when she first put them in, I didn’t even realize how depressed I was. I felt like I was coming alive for the first time in years!! I’m pretty sure a lot of my depression has been due to eating gluten before my Celiac diagnoses and from hormones the last couple of years. Anyway, I know the staples need replacing when I start waking up feeling sick EVERY morning–and I’m NOT pregnant 🙂

Now instead of feeling sick in the mornings, I enjoy walking this little cutie:

Well, Thanksgiving has come and gone and I have been loving some new recipes! First of all, I am happy to say I made it through the holiday without even sniffing gluten or sugar! Yay me 😉 I was a little lot worried that I would not be able to resist all the traditional food. So, I made sure to take my own and basically stayed away from the large table of food at my mom’s. I have been learning more about the anti-candida diet and really prayed hard that God would help me stick to it! He answered my prayer 🙂

My Thanksgiving day started off with a yummy HOT breakfast–southwestern style. I have realized that I do much better with a BIG HOT breakfast–not cold and raw (more about that later). Here are a few I have been enjoying.

Did I mention I have a new BFF? I don’t think she knows it yet, but Ricki at Diet, Dessert and Dogs is saving my life with this Anti-Candida thing!! Thanks a million Ricki! I still have SO many more recipes to explore! The recipe for the Sweet Almond Sauce is here and it is to die for!!

Anti-Candida Stew

Yet another wonderful recipe from Diet, Dessert and Dogs! I used quinoa instead of rice and I did put the sweet potato, but will probably leave it out next time. I took this with me to my mom’s and didn’t touch anything else. I KNEW if I took even ONE bite of the traditional food, my taste buds would go BONKERS and I would be in trouble!

Dessert on Thanksgiving:

Tofu Carob Pudding (sugar free:)

I’m still not sure that tofu works for me, but it was certainly better than eating sugar and gluten. Tofu doesn’t make my stomach hurt, but I have noticed some unpleasant reactions to it. I think it is worth eating occasionally, but I couldn’t eat it every day.

So, basically, Ricki saved my Thanksgiving. I LOVE the blogging world. We have never even met and yet blogs are SO helpful!

Just a quick note about the raw diet in my life. I went to the ND the other day and she and I both think it is best if I just concentrate on staying away from sugar and gluten. With my past eating history, too many rules was REALLY freaking me out! Food was VERY quickly becoming my enemy and I just can NOT go there again. So, I will eat raw when I want (like kale salad) and cooked when I want. I’m sure it will be more cooked than raw and that has to be okay–if for no other reason than to keep my sanity! Eating disorders are a powerful form of bondage that I don’t want any part of–EVER AGAIN!! I have to see food as fuel and as my friend,and I wasn’t seeing it that way when trying to follow so many rules. I am feeling MUCH better emotionally since coming to this place with my diet 😀 I know there are rules to follow on the anti-candida diet, but I think it is easier than trying to do mostly raw. I’m not much into raw eggs, but have been loving them scrambled for my breakfast!

Better run now. I think my daughter and I are going to try to go to a movie today and maybe do a little window shopping 🙂 Hope you have a blessed weekend!

Menu Swap-Sept. 29th

I am excited to be hosting the menu swap this week for my very first time! I have chosen almonds as my ingredient of the week. In my last post, I was sharing about my changes in my diet. I have just finished reading ‘Breaking The Vicious Cycle’ by Elaine Gottschall. I am completely amazed at how many ways almonds can be used to bake goodies. I had almond meal pancakes this morning with peaches my daughter had put in the freezer for me. It was delicious! I have also made almond meal pitas and muffins. I am very pleased with everything I have tried so far. I was a little concerned at first about the cost of using almonds for my main baking, but I went to Sam’s yesterday and found almonds for 3.66 a pound! And, if I’m not buying all the other gluten-free flours, it may even be cheaper in the long run.

My body is responding VERY well to the changes I have made over the last week and a half. I can’t even believe how different I feel. One of the big changes I have noticed is that I don’t feel bloated at all. I didn’t realize that the way I felt was not normal until I went off of all grains! I am also sleeping much better. I am actually sleeping deep enough to dream now which is something that didn’t happen much before. Sleeping better means more energy during the day. Yeah! I have really enjoyed trying new foods and feeling much better. My menu this week may change a little as the week goes on, but here is a rough idea of what we will be eating in my house:)

Monday: Almond crusted chicken, green beans, salad

Tuesday: Vegetable meat loaf, Cauliflower mashed “potatoes”

Wednesday: Pizza (using a SCD recipe for the crust)

Thursday: Parmesan broiled flounder, steamed broccoli w/ almonds, salad

Friday: leftovers/sandwiches (almond bread for me)

Since adding meat back into my diet, cooking for the family has become much easier. We can all eat the same things now except I don’t eat grains. This has made my life and cooking SO much easier.

Cheryl at Gluten Free Goodness is also going grain free for a while. She will be making some goodies using almond flour and has a fabulous menu posted this week. The agave “caramel” sauce made my mouth water!

Sarah at Everyday Gluten Free is trying to spruce up her menu and get out of a rut. Seeing other people’s blogs is a good way to get new ideas. My kids would really like the tator tot casserole that is on her menu this week.

Book of Yum has a wonderful picture and recipe for grilled asparagus and a tasty looking recipe for Summer Bean Salad. As always, her menu looks great!

Asparagus Thin is newly engaged! Yeah Manda! Congrats. She is cooking up a storm in the midst of a busy work schedule. I am really interested in her plantain omelets that are on her menu for the week.

Lilac Kitchen is sensitive to almonds so won’t be using them, but has a great menu posted. She is planning to retry an eclaire recipe this week using hazlenut flour. I have never used that flour before. I bet it’s good!
Angela has been having a blast with her friends! Good for you Angela:) Everybody needs a break every now and then. She has lots of yummy crockpot meals planned for this week. I need to do more crock pot cooking. It makes things so much easier during busy times!
Fresh Ginger is joining us with a fabulous looking menu. Thursday sounds really good with Lebanese Green Bean Stew with grass fed beef. The weather is getting cooler and perfect for stews and chilis. She is also having a semi-chili recipe this week. Make sure and check it out!
