3 new babies:)

My cat Lyla had her babies while we were in Florida! She had three little cuties and she is being such a good mama 🙂 Now time to schedule a spaying!

I have had a VERY hard time getting back to real life since arriving home on Sunday afternoon–hence the no blogging. I want to say ‘THANK YOU’ for the supportive comments on my last post.

My vacation was total bliss but my tummy ended up a WRECK!! We ate out way more than I anticipated and even though I tried to eat ‘safe’ foods, you just never know what you are truly getting when eating out. I did however find a really cool place called Cosimos that had a full gluten free menu. I thought I had died and gone to heaven! Look what I got:

This was by far the best meal I had while on vacation! I really splurged here with grains and dairy, but by this point, my gut was rebelling against everything I ate. So, I figured why not enjoy it 8) Hubby and I ate the leftover pizza for lunch the next day before hitting the road.

 We really had such a great time and I am SO thankful we had the opportunity to go. But, back to real life means back to work so I better scoot.

I AM POOPED!!!! My week is proving to be a challenge. Something happens when you know you are leaving for a week of bliss and you still have to get through several days of work! UGH 😦 I have to work a half day tomorrow and Friday and then I am out of here! Is Friday EVER going to get here?

I don’t know if I mentioned that we (my hubby and I) are headed to Florida-I mean I know I said we are going to the beach, but I didn’t say where. Of course I HAD to get online and see if there is a Whole Foods anywhere within driving distance. I’m willing to go pretty far, but I don’t think the hubby would like it. Anyway, I am happy to report that there IS a Whole Foods about 25 minutes from where we are staying. Twenty Five minutes is nothing when you live in the country like I do. I’m thinking anniversary dinner at Whole Foods–just kidding 😉 I WILL however eat there at least once and do some shopping.

I just got back from an appointment with my ND. We are trying some new natural stuff for my hormones etc. I haven’t really shared much about all that stuff but my OB/GYN had put me on Vagifem (even though I am not post menopausal yet). She said that it wasn’t absorbed throughout my whole body so it should be perfectly safe. After MUCH reading about it, I have decided I want to stop using it. I have nothing against anyone who chooses to use it, I just don’t feel it is best for me. I’m really praying that the natural stuff will do the trick.

We also talked about oxalates and how they may be affecting my female problems. I have been doing TONS of research about oxalates and found it very interesting that some people with digestive disorders tend to absorb too many oxalates. It’s amazing what all a defective gut can affect! Anyway, the verdict is–watch oxalates pretty closely, but can have higher oxalate foods occasionally. I also learned that if I am going to eat high oxalate foods, I should make sure and drink plenty of water before and after eating to help flush the oxalates out. I haven’t had spinach in DAYS!! I did have some raw almonds today but that was the only food relatively high in oxalates that I had.

Sorry this is a boring pictureless post, but I haven’t even been able to think about stopping to take pictures–just trying to get through my days!

Whew! I had a busy weekend! How about you? Saturday we went to my father-in-laws 60th birthday party–no pics–forgot camera. I had a good time, but ate things I shouldn’t have. Hey, my belly was already a wreck so I took my meds and went for it. Sunday was a potluck after church. I did NOT cheat that day–yay for me. I only had a little salad and had something else when I got home. 

As busy as my weekend was, my week is about to explode into major busyness. I have a busy work week, but the best part is that my middle son is turning 18!! My other two are 19 and 14! Good grief I feel SO old!! We are having to put off the party for a bit though because… 

My hubby and I are leaving Friday for our 2oth anniversary/2nd honeymoon!!! We will be gone for a whole week with no teen drama, no work, just lying around on the beach and relaxing. We are planning a big birthday bash for when we get back. I am SO looking forward to a vacation. I’m sure I will miss my youngin’s terribly though!! It will be weird to not have them around. My husband and I have never gone anywhere for a week without them–except once (went to Nashville and met Heather) and that wasn’t really a vacation for the hubby because it was for work. I on the other hand had a great time–HI HEATHER 🙂 

Okay, so on to food. I am back into sprouting! 


I experimented with sprouting some last year and thought it was pretty cool and easy. But, the main reason I did it was for digestion.  I am SO stubborn that I just keep trying grains and they just keep NOT working. I am sprouting some quinoa, buckwheat and oat grouts to see if I can handle sprouted grains any better. Not sure if it’s going to work though. I’m also sprouting mung beans and broccoli sprouts. 

Remember the buckwheat pancakes I used for bread the other day? Well, I had the pancakes for breakfast the next morning.

 Buckwheat is not technically a grain but my belly did NOT appreciate this! Sad 😦 And, I have also realized that I may need to go on a low oxalate diet to help my female issues. I’m waiting to hear back from my ND as to whether this is something I need to try. Believe me, I don’t want to do it if it isn’t absolutely necessary. I don’t want to go into a lot of detail, but some of my main foods that I depend on are VERY high oxalate–like spinach, almonds/almond milk, stevia and chocolate–heaven forbid!! There may be some major changes to my diet coming soon, but I am choosing to just focus on today 😉 Worrying about what may be coming is a waste of my energy.

My hubby and I ended up going to Gatlinburg, TN for our over-nighter! We had a really good time, but I didn’t take a single picture of my food because it really wasn’t anything to write home about. I did learn a very important lesson though–THERE IS MORE TO LIFE THAN FOOD/EATING:) I seem to have forgotten that lately as I am trying to figure out how to get well. It seems that my brain has been overloaded with thoughts of what I can and can not eat. So, hubby didn’t want me to pack any food for our trip. That was a HUGE stretch for me! I did however manage to take along my Sunbutter and a little Gluten Free Sprouted Bread. I had taken the bread to my ND appt.(more about that another day) to see if she thought I could start eating some occasionally.
I mainly survived on salad while we were away–by salad, I mean very plain simple ones that my body could digest. Still not able to eat certain veggies raw. I realized while eating salads at restaurants that fresh organic veggies are SO much better and worth the price! We couldn’t find (due to time and fighting traffic) any really nice or unique places to eat, so that left us with pretty ordinary choices. My first meal(salad:) was at Shoney’s. Let me just say, it wasn’t even worth chewing. Everything tasted ‘dead’ compared to the fresh organic produce that I am used to having at home.
I also ate some of my bread and Sunbutter and we picked up a few things at Kroger. Saturday afternoon was extremely hot and I wanted ice cream!! The ND said I could start having a little agave and I already could have coconut milk. Do you know what that leads to? Coconut milk ice cream of course! We bought a pint and sat outside and ate the whole thing–so much for a little agave. Hey, when you have been living on non-filling, tastless salads–some ice cream is a must!
We walked around all the shops in Gatlinburg until about 3pm and decided it was time to get out of the heat. We headed towards home, but made a pit stop first to see this little beauty:

This is my cousin’s daughter’s baby. They live in Kingsport, TN which is where I was born:) These are the only blog worthy pictures I took while I was away.
All in all, we had a very relaxing weekend. I may not have had all the foods I would normally have at home, but I was content–even with tasteless salads. I was just glad to be with my husband and away from all the things at home that require so much attention and work. My tummy was out of whack by the time we got home but I was okay with that. I am really trying to learn to relax about my health and to enjoy life going on around me:) This trip was VERY good for me!

I go back to the ND today! My appetite has been like a yo-yo this week which is really stressing me out! I can’t wait to talk to her more about my diet etc. I’m going to ask her about adding some foods back in and see if that helps me feel more ‘normal’ with my eating. I have felt like a rabbit living on lettuce and spinach–unless I’m cheating!

A few days ago, I had asked the health food store if they could order some Go-Raw snack bars for me to try. They called and said they got them and hubby and I headed over to check it out.

blog pictures 657The first thing that really caught my eye was the PRICE–$3.19 a piece!! Yikes! So, I got ONE. I figure it was the least I could do since they did order them for me:) I then thought it was a little weird how long and wide they were–and flat. I mean this is not your average size snack bar! I opened it–after paying of course–and took a bite. First bite–kind of eehh, so so. At first, I thought I didn’t really like it. After a few more bites though, I decided it wasn’t bad. I think the first bite is just not what I was expecting. My taste buds were thinking granola bar and got a more ‘earthy’ taste. You could definitely taste the buckwheat. I think if you cut these into thirds, it wouldn’t be a bad price, but I would not pay that for a bar if I was going to eat the whole thing at once! I MAY get one every now and then just to have in my purse in case of emergency, but won’t be eating these on a regular basis. I’m actually going to try making something like this on my own when I have time–that’s the tricky part:)

Okay, on to something a little more fun! On the way to the health food store, my hubby says–“Let’s just get on the Blueridge Parkway after your ND appt. and drive to NC!” I said–“Are you SERIOUS?” You have to understand, we are NOT typically very spontaneous people!!! Our 19th anniversary was last week and we usually always go somewhere for a weekend. This year, we didn’t think we were going to go anywhere. Now we are heading to– I don’t know where—and staying at—I haven’t got a clue!!!! He doesn’t even want me to pack any food!! Now THAT scares the pants off of me! It’s a little hard to be spontaneous with food allergies gallore, 3 dogs, 2 cats and 2 turtles–yes, I said turtles! All of our young ‘uns will be out of town too:) Animals taken care of–check, not packing any food–still praying through that one:)

Today is a very special day for several reasons. First of all, it is my blog’s one year anniversary! Secondly, I have a give away for you! But, I think the most important reason is because of a little girl I want to introduce you to.

I have been thinking a lot the last couple of weeks about how blogging has benefited my gluten free living SO much. There have been tons of yummy recipes. I have learned more about food than I ever thought possible and I have met some new friends. Before I found the blogging world, I sometimes felt very alone in this journey to live free of gluten and other foods I can’t tolerate. Granted, there are still days that are hard and I still get discouraged. Unexplained pain day after day can take a toll on a person’s peace and joy. A couple of weeks ago, I was having a particularly hard time and found myself grumbling and complaining in my heart a LOT about my health woes. That’s when my mom forwarded something to me that really blessed me.

I want to tell you about a little girl that I go to church with that just simply amazes me! I wish I had a picture of her (she is a doll) but I don’t. Anyway, her name is Marissa and she is 9 years old. This child has been sick pretty much her whole life! She has ulcerative colitis and celiac. The most recent health scare for her and her family is the possibility of diabetes. She has been in and out of the hospital numerous times even this last year. But, EVERY time I see her she is smiling. Her mom said that she never complains or asks ‘why’. She never gives the Drs. a hard time and even thanks the nurses when they take her blood over and over again! The last time she was in the hospital, she posted an entry on her new blog without her parents even being aware of it. This post is what really made me think about how grateful I should be for my life–even in the midst of difficult health issues.

Hi i’m issa and i have celiac and colitis and have a chance to have diabieties. I’m actually in the hospital because my blood sugar was 708. thank the lord i went down to 135 today we are praising the lord that i’m still ailve and my blood sugar is down. we have such faith and trust and strength in god. because he is our savior and our might. i’m still a normal kid and run dance & play. my life can be hard but i still have faith in him. isn’t it amazing how he can do that. he can heal anyone and anything. it was so dissapointing. last night i was on the computer listening to music and dancing. my sister had tears in her eyes and said that my mom wanted me upstairs and i went upstairs and she said sweetie we need to go to the hospital my blood sugar was high. and my sister had a friend over. it was so awful but i’m probably leaving tomorrow. so praise the lord! gotta run by issa

I wanted to share this with you to show the simple faith of a child. That’s the kind of faith I want to have:) I also want to ask those of you that are Christians to please pray for Marissa’s health. Also, pray for her parents as they care for her. Pray for strength and faith for them all:)
