I know, Christmas is long gone, but I’m making a different kind of list. I’m back to Living Free after a long break! I have been blogging at Heart, Soul and Strength lately . That blog is mostly about health stuff, but I have found myself wanting to talk about FOOD!!

I am currently on a gluten free, grain free, dairy free, sugar free (not even stevia), low oxalate diet! What a mouthful! So, the other day I was feeling completely overwhelmed by all of this and I thought ‘I just need to make a list!’. I started going through the low-oxalate food list and grain free cookbooks and writing down different possibilities for meals that meet all of my dietary restrictions. That way, when I feel lost and overwhelmed, I can just go to my list and pick out a meal~and KNOW that is it safe 🙂 Whew!

Normally when people go grain free, they rely more on nuts and nut flours, but I can’t do that because of oxalates. My stand by flour these days is coconut flour and I LOVE it! Anyway, I wanted to show you what I had to eat yesterday.

Spirulina smoothie with 2 boiled eggs

I had been stumped as to how to make a smoothie with NO sweetener of any kind. My fruits are pretty limited due to oxalates so no bananas in this baby! Then I remembered~coconut water! I used 3/4 c. coconut water, 1/4 coconut milk(canned), 1 tbs. ground flax, 1-1/2 tsp. spirulina powder, frozen mango and pineapple.

Lunch:

Chicken, mashed cauliflower, coconut flour bread w/ avocado

That’s not a very good picture, but I can assure you, it was delicious! I cooked the chicken in wheat free tamari and some herbs and had garlicky mashed cauliflower. The bread and avocado were just the icing on the cake 😉

Dinner:

Salad, beef and broccoli~chinese style and coconut flour bread

Again, terrible picture (gotta work on that), but tasted heavenly. I actually used deer tenderloin instead of beef. So, yummy! The deer and broccoli had sesame oil and lots of garlic. I planned on cooking cabbage with this, but ran out of energy. Never fear, this is a meal we WILL be having again!

My Dr. only wants me to eat every 5 hours and all of these meals kept me plenty satisfied until time to eat again 🙂 WooHoo!! Off to a good start on my ‘list’!

I am home alone this afternoon! I think a nap and some yoga are in my near future. I just had to get on here and share what  a GREAT sermon we had at church today. The message was about abiding in Christ (John 15:1-5). I came away feeling very encouraged because I don’t have to strive and struggle in my life! Whew! I just need to abide in HIM and I WILL bear much good fruit 😉

I do have a couple of meals to share with you, but will keep it short and simple.

First, I made (almond flour) sugar free chocolate chip scones yesterday that were to die for!

I started out planning to make cranberry scones by adapting a recipe from ‘The Gluten Free Almond Flour Cookbook’ by Elana Amsterdam. Somehow, they turned into sugar free chocolate chip scones–I have no idea how that happened, but they sure were tasty.

Then for dinner last night (and lunch today) I found a new favorite!

This is spaghetti squash with green onions, red pepper, diced chicken breast and a teeny bit of montery jack cheese. I don’t normally eat cheese, but I think I’m okay with a couple of tablespoons 😉

Okay, so maybe I have two new favorites! I have been eating this salad a lot latey too!

Spinach, romaine, broccoli, red peppers, green onions, organic canned chicken with avocado. I usually also have a few baby carrots on the side. Makes a perfect quick, simple lunch!

I’m still in awe at how well the ear staples are working for me. I’m not craving sugar and am feeling better than I have in ages!! I guess if God can use a donkey(Numbers 22:21-32), he can use ear staples 🙂

I’m off to take that nap now!

I just back from my first vinyasa style hot yoga class. Can I just say–I AM HOOKED !! I absolutely loved it! I was a little nervous that I wouldn’t be able to do it. My tummy argued with me ALL day!

About two hours before class, I had a small banana with MORE Sunbutter. I think I’m addicted to sunbutter:)

blog pictures 551Immediately after class I drank coconut water with lime. Coconut water is Nature’s Gatorade.

When I got home, I had a piece of gluten free sprouted bread with organic all fruit preserves (no picture as it went in my tummy too fast:)

I can’t wait to go back to class. It is only once a week but I WILL be practicing at home—with a heater on full blast:)

I have been enjoying avocados immensely lately! But, I have also been reminded of a funny story about avocados. A couple of years ago, I was in the store picking through the avocados when this complete stranger came up to me and proceeded to tell me which avocado I should buy. Now, her advice was not bad and in fact I probably needed to be told which one was the best. I had just discovered avocados at that time. There were a couple of problems though. First of all, I did not ask for her advice and most importantly, I let her tell me what to do and I did NOT even know her!! You may ask what the big deal is. Well, I was SO mad at myself because my whole life has been about pleasing other people. I let a complete stranger tell me what was best for me! When I got home from the store and was telling a friend what had happened, she laughed at how easily swayed I am. Now, every time I do something JUST to please someone else, she reminds me of the avocado lady.

Why am I bringing this story up? Well, I have really been struggling with doing what other people say is best–even if I KNOW it may not be what is best for me. This happens mostly with my diet and health. I read something and think–‘oh, I should do that’. I think what brought this on is the fact that I stopped doing a food diary–after THREE years of doing it EVERY single day. I know it sounds silly, but somehow that food diary was a comfort for me and a way to still feel in control. Eating disorders are all about control and I ‘thought’ I had let go of all that. I am finding out differently. Since not doing my food diary, I find myself FREAKING OUT at night trying to add up everything in my head. I couldn’t even watch a movie the other night for going over my food a gazillion times in my head!! Then, that turns into—‘I should do this diet or that diet because so and so is doing it and it is working for them’. I HAVE come a LONG way in my healing from an eating disorder. I’m not saying that I am still in the grips of it. I’m not! I just get angry with myself for not listening to MY body. I was telling someone the other day about an ND (Dr. of natural medicine) that I was thinking of going to. I felt like it would be a really good thing for me to do—until I talked to this person and heard their negative opinion. Then, all of a sudden, I didn’t think it was such a good idea anymore. Why do I have to be SO influenced by what others think? I have no idea. I am thankful that I am aware of it and that I can work on it though. I need God to help me listen to HIM, not what everyone else tells me!

Now, on to some yummy eats–with avocado of course!

Now, before you gasp over all those avocados I have consumed–never fear, I did NOT eat all of that in one day. This is food I have eaten over the last week or two. Had I eaten all of that in one day, I WOULD have something to worry about:) Man, I’m eating a lot of sprouts too! Didn’t realize that.

As for my struggle with doing what is best for ME, I will continue to work towards a diet that is healthy and works for MY tummy. I CAN NOT  worry about low-carb, grain free, raw, veggie or any other ‘diet’. Pray for me:) My stinkin’ thinkin’ gets me in trouble every time!

Oh, I have signed up for a HOT Yoga class!! I can’t wait! It starts tomorrow night. I have been reading up on it so that I kind of know what to expect–that would be SWEAT–A LOT!! I’ll let ya know how it goes–if I survive:)

Happy Monday everyone! I guess you noticed I changed my blog–again:) I was playing around and deleted the template I had and so I just left it at this. I felt like my other background was too busy anyway. Plain and simple(just like my food:) works for me.

I am happy to say that I can drink my greens again–thanks to Heather. I saw the idea of putting frozen avocado in the smoothie instead of banana. I’m tellin’ ya, this was the creamiest smoothie EVER! I didn’t even miss the banana. The only problem is, I am getting hungry way too fast after a smoothie. So, this morning I tried green cream of buckwheat. Polly eats green oats all the time, so I wanted to give green buckwheat a try. I was NOT disappointed either. I was a little worried about the carbs in the buckwheat but I made sure to put protein powder and some good fat with a little coconut oil. So far so good. I didn’t feel all wacky with my sugar and I am not hungry yet! It seems like I am always hungry these days and never really feel full with what I am eating. This bowl of cereal was actually a tad too much though:) Are you eating or drinking your greens? I promise you can NOT taste the spinach! I do put a little stevia or sometimes a little honey in mine:) If you’ve never tried a green smoothie or green cereal, you should definitely check it out.

Gotta run now. Make sure and stop by tomorrow. It’s going to be a special day with a surprise:)

Post note: I felt way more satisfied today as far as hunger but I’m not sure the buckwheat is working for my tummy. By early afternoon, my tummy was all bloated and WAY out of whack! That really stinks! I will try green buckwheat again soon and see how it goes. Until then, I will keep searching for the perfect filling and nourishing breakfast:) Any ideas?
