I was so temtped to call this post ‘O Happy Crappy Day’! My day started bright and early at 4:30am when I woke up and could not go back to sleep. By 7:30 I already felt like I had put in a full day’s work! I chose to skip my morning walk because I had two houses to clean today and my poor little Samsonย  has been under the weather yesterday and today. I think he is on the mend, but if he isn’t better by tomorrow, we shall take a trip to the vet.

Thankfully, my day got better as it went and I actually took pictures of all of my food today–well almost. At 6:30am I was STARVING but I didn’t want to eat my real breakfast then. So, I had my last piece of ‘More Than A Meal Bar’. I am going to figure out a way to make those suckers–they are $7.50 a piece and I ate mine way too fast–4 days ๐Ÿ™‚

For my real breakfast I ate:

1 egg + 2 whites, almond flour zucchini muffin

I got the muffin recipe from the book ‘Dr. Mercola’s Total Health Program’. I really like that book and I LOVE the muffins.

After cleaning a house for an 86 yr. old client whom I have become pretty fond of, I came home for lunch and had this:

I found a new dressing the other day that I used for the first time today.

I am NOT motivated to make my own dressing and was really pleased with this gluten free roasted garlic dressing!

I don’t think a day EVER goes by without me having something sweet! I think every tooth in my mouth is a sweet tooth!

After lunch, I went to clean my brother’s house–which is brand new and makes me want to live there ๐Ÿ™‚

For snack, I had a little problem with my yogurt.

I was going to eat the WholeSoy yogurt and when I tasted it, it was awful!! I think it was spoiled even though the date was still good. I hate it when stuff like that happens. So, in the trash it went and I ate the rest of my Wildwood yogurt. I like the Wildwood and it is what I normally eat, but I found the other on sale–now I know why! I have gone back and forth about the whole soy debate, but having to be dairy free,ย I have decided that a little soy is not going to kill me.ย ย

I used Healthy ‘N Fit egg white protein powder in strawberry passion flavor. I REALLY like that brand of protein powder! It is ONLY sweetened with stevia which is aย huge plus in my book!ย I had vanilla ice cream flavor before and just recently ordered the strawberry.

By dinner time, my early morning was really getting to me! I almost fell asleep driving home. I was too lazy to fix anything difficult–so this is what I had (while trying to watch a netflix movie that refused to load):

I really wanted something else a little while after dinner, but I have gotten in a bad habit of eating too late in the evening. It is usually NOT because I’m hungry but just because I want to munch. I am trying really hard to stop eating by 7pm. Of course, if I’m really hungry I will eat something else, but I think my belly feels better when it isn’t full at bedtime.

ย That is a pretty typical day for me–most of the time. Sometimes, I eat some grains, but I don’t really do well with them. My ND suggested that I have 1 serving of grains every three days. Yeah right! If I have grains, I only want more grains. Then I feel icky, bloated and depressed!

I have dishes calling my name, but honestly, I think I am ready to crash! Hope you all had a wonderful day 8)

I am home alone this afternoon! I think a nap and some yoga are in my near future. I just had to get on here and share whatย  a GREAT sermon we had at church today. The message was about abiding in Christ (John 15:1-5). I came away feeling very encouraged because I don’t have to strive and struggle in my life! Whew! I just need to abide in HIM and I WILL bear much good fruit ๐Ÿ˜‰

I do have a couple of meals to share with you, but will keep it short and simple.

First, I made (almond flour)ย sugar free chocolate chip scones yesterday that were to die for!

I started out planning to make cranberry scones by adapting a recipe from ‘The Gluten Free Almond Flour Cookbook’ by Elana Amsterdam. Somehow, they turned into sugar free chocolate chip scones–I have no idea how that happened, but they sure were tasty.

Then for dinner last night (and lunch today) I found a new favorite!

This is spaghetti squash with green onions, red pepper, diced chicken breast and a teeny bit of montery jack cheese. I don’t normally eat cheese, but I think I’m okay with a couple of tablespoons ๐Ÿ˜‰

Okay, so maybe I have two new favorites! I have been eating this salad a lot latey too!

Spinach, romaine, broccoli, red peppers, green onions, organic canned chicken with avocado. I usually also have a few baby carrots on the side. Makes a perfect quick, simple lunch!

I’m still in awe at how well the ear staples are working for me. I’m not craving sugar and am feeling better than I have in ages!! I guess if God can use a donkey(Numbers 22:21-32), he can use ear staples ๐Ÿ™‚

Well, the holidays are over and time to get back to ‘normal’ life–whatever that means. We had a fabulous Christmas but I don’t have any pics loaded on the computer yet. I have been extremely lazy about getting on the computer. My favorite gift that I received was a Wii Fit Plus from my hubby. I LOVE IT!! I also got some Christmas money and got the Wii Active. I quickly learned that the Wii Active can kick my tail!! It is more of a workout than the Wii Fit–although the Wii fit can burn some booty too ๐Ÿ™‚ Anyway, I am currently pretty daggone sore from them both!

I thought I probably should get on here and kind of explain why I haven’t been blogging for the last few weeks. It really had little to do with the busyness of the holidays. After reading this post by Heather, I thought that I too should be able to be honest on MY blog. Ya see, I kind of stepped back because I have been feeling like a hypocrite or a lunatic–which ever one is worse. I say that because of the fact that my diet is EVER changing and confusing. I say I’m doing one thing only to find that it doesn’t work for me. Every time I think I have something figured out–I realize that I don’t. Then I feel all this pressure to stick to what I said–EVEN IF IT’S NOT WORKING!! So, that is BAD, right? Yeah!

This past year has been one of the most confusing where my health is concerned. I loved what Heather said about labels and gave that a lot of thought. Thanks Heather ๐Ÿ™‚ I am NOT labeling myself anymore. I am NOT vegetarian(for real), high raw, vegan, low carb, macrobiotic yada, yada, yada!

I DO, however, HAVE to stay away from gluten due to Celiac and I HAVE to stay away from things that feed my candida.ย  I have tried way TOO hard to force my body to do one thing or another and it has been miserable!! This past week has been so freeing because I am eating what sounds good–as long as it’s not going to worsen my health. Last night, I had cooked cabbage and onions with ground deer meat that I seasoned with cumin, chili powder, garlic powder and paprika(sorry–no pics–I gobbled it up!). It HIT THE SPOT!! Gasp, I ate deer! Yes, my hubby is a hunter and that is something I have never felt comfortable enough to share on my blog due to all the veggie fanfare ๐Ÿ™‚ That’s all I’m sayin’ on that note. So, I am eating meat again and feeling SO much better. I DO think that some people just don’t thrive on a veggie diet and I’m learning that I’m one of them.

Along with the meat in my diet, I am mainly eating eggs and tons of veggies. This seems to be helping my yeast some and for that I am SO grateful. It’s NOT about labels, but about finding what will make me well!! I am also HAPPY ๐Ÿ˜€ to report that I am eating some almond flour and doing okay!! You have NO idea how happy that makes me!! I got ‘The Almond Flour Cookbook’ and have made several things out of it. Of course, I have to tweak and use stevia instead of agave due to the candida, but it’s working.

Last but not least, my hubby has agreed to eat whatever I’m eating with a few exceptions–a.k.a he is eating cheese and I’m not–little things like that. It has made life SO much easier and he’s losing weight to boot ๐Ÿ™‚

Boy, this week has completely flown by! My cleaning schedule has been intense lately! For those of you new to my blog, I clean houses to put food on our table. One of my sweet surprises was actually at a new client’s house. I started cleaning for a lady I go to church with. We had never even really talked before due to the fact that they are a pretty new family. She has some pretty severe health issues and hired me to help her out. She has FIVE daughters ages 9 and under–whew! Anyway, so I go to clean for her and we just really clicked. I went to ‘work’ and made a new friend! I love it when I can be friends with the people I work for:)

Another sweet surprise I got this week was this:

blog pictures 587In case you can’t see it, this is a very sweet handmade card (from Kristin) and a gift card to Barnes and Noble!!! WooHoo!! This just happened to come on a day that I was really struggling. I had worked really hard that day and was feeling a little down in the dumps.ย  I got home and had this wonderful surprise waiting in the mail for me–well, it was actually for me AND my hubby:) We house/dog sat for our friends a few weeks ago and they sent us this as a ‘thank you’. Bet ya can’t guess what I got with this gift card! Okay, first of all, my hubby is NOT a book person. But, I told him we would split the card half and half. He could spend his on coffee etc. and I could get a book–since I can’t drink coffee:) Do you know what he did though? He gave me to whole amount. He always does things like that to bless me. He doesn’t usually ever want to buy for himself. SWEET surpirse! So, back to what I got. If you guessed a cookbook–you are one smart cookie:) Speaking of cookie, I sure would like to have one right now. FOCUS KIMBERLY!!! Thanks for the book Kristin!!!!:)

blog pictures 598This book has tons of good info. and even more yummy recipes. Only a few pretty pictures though. That’s okay, the pages are nice and shiny:) This book is about raw living food. I will say that it is a little extreme.ย  I have learned that I will NEVER agree with EVERYTHING in any book–except the Bible๐Ÿ™‚ I did learn some new things about food etc. but the recipes are what really sold me on this book. As for the info., I will take what I like and throw out the rest. I think this dude is into some different spiritual thinking than I would agree with:) That doesn’t mean I can’t use his recipes though.

Okay, on to my next SWEET, AWESOME surprise of the week. I am SOOO excited about this one! I mean if I had the energy, I would seriously be doing the happy dance:) My hubby has worked all sorts of weird off shifts our whole 19 years of marriage. He has been on midnight for a while now and it gets pretty lonely sleeping in a bed all by myself (with my kitty). Our meals are all out of whack because he wants breakfast when it is our dinner time. Anyway, HE GETS TO GO TO DAYSHIFT!!!!! Is that not awesome?! He has one more week of night shift and then we ‘might’ have a ‘normal’ life.

So, what have I been doing when I’m not working?

blog pictures 597Sprouting (buckwheat and broccoli sprouts)

blog pictures 596Started a batch of buckgurt (oatgurt only with buckwheat). I tried this once before and it was a complete flop but I really think I had a bad batch of buckwheat. The buckwheat grouts I am using for this smelled and looked completely different. The first time I tried it, the buckwheat smelled really strong (in a bad way). What I started today had a really good fresh smell. We’ll see how it goes. I will update in a couple of days on this.

As for my ‘experiment’–I am still experimenting:) I am pretty much doing raw until dinner, juicing(only once a day though), and ‘trying’ to watch my food combinations. I can’t always worry about perfect food combining because there are times that I feel like that is too restrictive. I don’t want to fall back into restricting my food so much. For the most part though, I think I’m doing okay most of the time.

How am I feeling? Well, I am VERY tired but I think that is just because I have been working more than usual. My stomach is doing well–most of the time. There are a couple of foods I have noticed cause me problems though. One of those is Stevia. EVERY time I use it, I notice I just do not feel well and I get headaches. I do better with pure raw honey. I use so little of it though that I am not going to worry about it (sugar wise). Another very unfortunate thing that has been bothering me is chicken!!! It was NOT my intention to go back to vegetarian when I started eating more raw. But, I can NOT deny that my tummy feels MUCH better when I don’t eat meat of any kind. Have tried chicken twice (each time a week apart) lately, and both times–it got me! I do plan on trying fish in a few days.

Overall, I think the change in my diet has been a good one. I am shocked and totally amazed that raw food is NOT killing my tummy! I am still eating some cooked foods –like my sprouted gluten free bread, 70% chocolate, a little sunbutter etc. My energy IS an issue, but we’ll see how I feel next week when I’m not working as much. This raw ’til dinner must not be too bad because ‘something’ keeps motivating me to do it:) I got up this morning and was thinking I would just eat whatever–and then I found myself wanting to eat fresh ‘living’ food! If anyone has ideas about energy–I would love your input! I’m open to try new things:)

I go to the ND tomorrow. I’m still not sure what to think about it but it won’t hurt to check this lady out. Who knows–maybe she can figure my gut out!

I really didn’t mean to write a novel. That’s what happens when I don’t blog for a couple days! Anyway, God has been SO good to me this week with all the sweet surprises! What are you thankful for this week?

White Bean Burger with Sprouts

blog pictures 386First of all, I just want to say that sprouts are the coolest thing ever! I recently sprouted mung beans and it was so easy and fun.

blog pictures 326This jar of sprouts started out as a measly 1/2 cup.ย  To do the sprouts, I rinsed very well and drained the mung beans. Then I just placed them in a jar with a thin cloth over the the top. I put a rubber band around the top to hold the cloth on. I then tilted the jar and laid it in my window sill. You can lay it anywhere as long as it’s tilted. I think I read too that you don’t want to put in a lot of sunlight. My window in the kitchen doesn’t get much sun:) Rinse and drain the beans 2-3 times a day and then tilt again. It doesn’t take long before you see babies! In about three days, you will be blessed with bunches of babies! I ate these with veggies and chicken mostly, but then needed to use them up before they went bad. I wasn’t real sure at the time how to store them or how long they would last.

blog pictures 452Since getting my handy dandy book yesterday, I now know that they can be stored in the fridge covered with water. But, it is still best to use them as soon as possible. My book says to soak the beans for 24-36 hours, but I didn’t do that and they were fine. I KNEW this book would come in handy:) You better believe I am going on a sprouting expedition! In fact, I would like to try burgers using more sprouted beans.

Okay, on to the burger recipe:)

Here are the ingredients:

1 can chickpeas

1 can small white beans

1-1/2 cups mung bean sprouts(chopped)

2 carrots chopped

1 onion diced

4 cloves fresh garlic

2 green chili peppers diced

2 Tbs. organic ketchup

3 Tbs. wheat free soy sauce

3 Tbs. Dijon mustard

3 tsp. cumin

3 tsp. chili powder

1 cup quinoa flakes

4 Tbs. coconut flour

2 eggs (I will leave these out next time due to tummy issues)

salt and pepper to taste

1 Tbs. olive oil

cooking spray or more oil for frying

Whew! That’s a long list, but they are easy peasy!

Put 1Tbs. oil in large skillet to saute’ onions, garlic, green chili peppers, and carrots. Add cumin and chili powder and cook a minute more. In the meantime, you can be smashing your beans and chopping the sprouts and place into a large bowl. Add onion and carrot mixture to beans. Stir in quinoa flakes(you could use oats if you aren’t fond of the taste of quinoa), eggs if using, coconut flour, ketchup, Dijon and soy sauce. Then you mix like this:

blog pictures 385See how fun! Next you form them into patties and cook in a little olive oil or non stick spray. Be careful not to flip them too early. They need to cook pretty good on one side before flipping without breaking. My daughter is the pro at this:) This should make about 12 patties.

blog pictures 440Another day, I had one crumbled on my salad. Yeah me! I can eat raw spinach now! (as long as I don’t over do it:)

I will have to save the recipe for coconut milk yogurt for another post. My post seem to be very lengthy these days! Anyway, I hope you enjoy this recipe! I would love to hear any of your sprouting experiences:) I want to eventually do a post all about sprouting, soaking and fermenting.

Speaking of fermenting–I tried to make a gluten free version of ‘sourdough’ bread. I used oatgurt as the starter. I mixed all the ingredients together and let it sit for 24 hours. I had a basic recipe to kind of go by (except using oatgurt was my idea and I changed the flours I used). Anyway, it looked like it was really going to work and I was so excited when it was time to stick it in the oven this morning. Well, let me just say–DO NOT TRY THIS AT HOME!!! I baked it and it even smelled yummy. It didn’t look half bad when I got it out either.

blog pictures 454I was filled with hope and anticipation as I waited for it to cool. I cut into it and took the first bite. I tried to be in denial and tell myself that it wasn’t THAT bad. It didn’t work! It tasted AWFUL!! Tie me up and gag me with a spoon AWFUL!! I think I’ll stick to no bread and occasionally have the yummy recipe I made the other day. Too much bread is never a good thing for my gut anyway:)

This may be a lengthy post–so hang on to your hats:)

Today has been an interesting day. I woke up at 4:30am with my tummy still rebelling from something. The key word there is ‘something’! By 6am, I was starving! So, I had some ice cream. Ice cream for breakfast is always a good thing and this ice cream was SO healthy–I didn’t even have to feel guilty.

blog pictures 448This was inspired by Heather’s green ice cream. I don’t remember exactly what I put in mine. I know it had coconut milk, coconut milk yogurt, spinach, PlantFusion protein powder, carob, honey and guar gum. When I got it out of the ice cream maker, I thought it looked just like mud! Well, it certainly didn’t taste like mud. I had it for dinner last night because I didn’t feel like eating anything else and then had it again this morning.

With my ice cream breakfast, I also had my sprouted bread that I mentioned in the last post. Sorry, no picture! I had to put it promptly in the freezer to keep from gorging on it. It was THE BEST gluten free bread I have EVER made!! I have read that soaking grains makes them taste better and boy am I a believer! I am now experimenting with a fermented (kind of like sourdough) gluten free bread. Guess what I’m using for the ‘sourdough’ starter–OATGURT! WooHoo:) I am trying to get away from using tapioca and arrowroot starch. The fermented bread doesn’t have startches like that. It is also yeast, dairy and egg free–without me having to tweak it. Gluten Free Sprouted/Soaked Multi-Grain Bread

I had an appointment with my nutritionist today. It was pretty depressing. Basically, she doesn’t know what to tell me anymore. It’s NOT her fault. My body just has a mind of it’s own and it doesn’t want to co-operate. She has told me everything she knows to tell me, and well, things just aren’t working. My food diaries are not very helpful these days because most of the time, there is no rhyme or reason for my pain.ย  The only good news was that I have maintained my weight since my last visit. So, after THREE years of her trying to walk me through my eating disorder and my Celiac and other food allergies, I walked out without making another appointment. I have been a HARD case for her! I walked out feeling like a hopeless case–BUT I CAN’T let myself stay there! So, what did I do?

blog pictures 452I bought a book:) Have I ever told you what a SUCKER I am for books? Well, I LOVE books! Unfortunately, that is what I want to buy when I’m feeling bummed out. Now, you may be asking yourself why on earth I bought a raw food book. Good question:) Am I going raw? No. I bought it because it talks a lot about fermenting and soaking and sprouting. I am ALL into that these days! Plus, it has really pretty pictures! I love books with pretty pictures even more than boring books:) My hubby will probably shoot me when he sees it, but I figure with all the money I’m going to save by not going to the nutritionist–Hey, this is cheap! By the way, if you are interested in the raw diet, you should check out LovIN my tummy!

Wow, life has been really busy lately! I have been on the Specific Carbohydrate Diet for just a little over a month now and thought I would give an update. I can not lie and say it has been easy because it hasn’t. I have had a lot to learn about food and my body and have been spending more time in the kitchen. I read a quote by Elaine Gottschall in a new cookbook I got for my birthday. It said, “Better to spend your time in the kitchen than in the bathroom.” This diet definitely takes work because everything is prepared from scratch. At least I know exactly what I’m eating versus eating pre-made food that I don’t even know where it came from! I am learning ways to make things a little faster in the kitchen though. I am cooking more at one time so that I have food that I can eat for several meals. I am freezing what I can and throwing nothing away. I am saving every drop of broth when I cook meat so that I can use it in soups etc. One thing that is time consuming is blanching and skinning almonds. After they are skinned, then they have to dry good before grinding them. Hopefully, I will eventually be able to just order a 25lb. box of almond meal and not have to do it myself. For now, I am just happy to be getting almonds for a good price.

Aside from the extra time this diet is taking, It is also taking a lot of paying attention to symptoms I have. For the first week on the diet, I felt great and wasn’t really having much trouble. I then started having a lot of stomach pain almost everyday and couldn’t figure out why. I’m thankful for the support of Erin at No More Crohns. She has been so kind to e-mail me back when I have had questions or just felt discouraged. Eventually, I realized I was having trouble with the yogurt. Well, the yogurt is a HUGE part of the diet and aids in healing the intestines. I stopped using the organic milk I was getting at Kroger and felt an immediate difference. I then was on the hunt for goat milk. I tried the Meyenburg brand and it tasted awful! I finally was able to find fresh goat milk at a health food store and it tasted much better. I seemed to handle the goat milk yogurt fine but the cost was outrageous! I began doing a lot of research about raw milk and making yogurt out of it. Raw milk is much easier to digest due to the enzymes still being intact. I found that you can make yogurt with raw milk as long as it is not heated above 110. Actually, I think I read that at 118 the enzymes begin being destroyed and if it is heated to 180, they are completely gone. So, my goal is to keep the enzymes and see if it works for me. There have been many people that couldn’t handle store bought milk but could drink raw milk without any problem. I found a farm online that is about an hour from my house and spoke to the guy there about my milk dilemma. He was willing to give me a 1/2 gallon to see if my body could handle it. I went yesterday and met him in person and was able to ask questions and get the milk. He told me that he has several people with intestinal problems that use his milk with great success. So, I have a batch of yogurt in now and am praying that it works. If it does work, there is a group of people that live near me that take turns driving to get the milk each week and then meet to pick it up in town close to me. That means I can get the milk without having to drive an hour every time and it cost 1/2 what the goat milk cost!

I think my problems so far on the diet have had a lot to do with the fact that I was pretty much vegan for a long time and now I am trying to add back in meat, eggs and dairy. I have felt some improvement this week though and am sticking to the diet 100%. The last time I saw my nutritionist, she laughed and said I was on a mission. My mission is to eat as healthy as I can, eat whole foods, and to eventually be PAIN FREE! To close on a good note–I have gotten two grain-free cookbooks since starting this diet. There is definitely NOT a shortage of recipes when following this diet! I am completely amazed at all the foods that can be made grain-free! Last night for dinner, I had a salad and a pizza with an almond meal crust that was delicious! I used raw milk cheese and had no problem with stomach pain:) I do love to cook and am having so much fun with my new cookbooks! The names of them are ‘Grain-Free Gourmet’ and ‘Recipes for the Specific Carbohydrate Diet’. These books are great whether you are grain-free or just gluten-free or neither!
