Hubby and I went on a date night last night to a place called Bull and Bones. I had looked online before we went and it said ‘gluten free friendly’ so I thought this would be a great place to go! We got there and asked the waiter if he could tell me what was gluten free. He went to ask and returned and proceeded to tell me that all of their steaks were gluten free–duh, and all their ribs were gluten free if you didn’t get the b’bcue sauce, yada, yada, yada. Problem:1) I do not like steak–I may taste a steak once a year–or less! 2) You could not pay me to eat ribs–tried them–once  3) was NOT in the mood for a salad or chicken. Actually, I wasn’t in the mood for ANYTHING on the menu!! So, what did I order–absolutely NOTHING!! I figured why pay anywhere from $12-$15 for something I don’t even want. Hubby got his ribs and fries and I sat and enjoyed my water. I felt very weird because everyone kept looking at me like I was an outcast! I have never done this before in my whole life, but I was glad I didn’t eat just for the sake of eating.

After hubby ate, we needed to find something that I DID want to eat. We went in an ice cream place, a chocolate store, and a smoothie place and still-NOTHING! Can you believe it? We made our way to the health food store across the street and I FINALLY settled on some millet and flax crackers and hummus. I could eat hummus anytime!

That hit the spot and I had it again for lunch today:) I also did end up getting a piece of chocolate at the health food store.


I was craving peanut butter, which is kind of weird because I never eat it, but I went with it. I had a few nibbles of this last night and few more at lunch today. I’m trying to make it last 😉

Later, before we came home, I got a small cup of chocolate ice cream with peanut butter cups in it. This was at a different ice cream place than we first went in. It’s called Cold Stone and they have the BEST chocolate ice cream! I don’t know what’s up with the chocolate and peanut butter craving, but it sure did taste good! I was completely satisfied after eating what I really wanted instead of settling for an expensive meal that didn’t appeal to me. I am trying to learn to really pay attention to what my body is craving and I think it is helping me. I’m not as worried about food rules etc. and I didn’t feel one bit guilty over the ice cream!! I can have treats in moderation and there is NOTHING wrong with that 🙂

Check out this load of stuff my hubby won at the health food store!! I don’t think I have EVER won anything in my life, so I don’t even bother to sign up. He signed up and told me he would win–guess he was right! This nice backpack was loaded with all kinds of goodies! I think pretty much all of it is gluten free, but not corn, rice etc. free:) So, my hubby will be doing most of the munching on this bunch of goodies. I bet there are almost a dozen snack bars! There was a bottle of body wash, coconut water (which I will gladly drink), hemp protein, acai fruitein, gluten free ‘granola’, single servings of peanut butter and almond butter and more!! There were also some herbal remedies, but no thanks! I am on enough of those already:)

Speaking of remedies, I think I am finally getting closer to what really works for me–I think:) I went to the ND last Friday and was complaining to her about my terrible cravings for things that I am NOT supposed to have. I thought it was because I was eating a high raw diet and not feeling satisfied. Well, come to find out, it was my hormones!! You can read about my journey into Peri-menopause here. She told me to increase my natural progesterone cream and I am feeling WAY more balanced (I have opted to NOT use any prescription hormones for my symptoms.)  Man, hormones can do scary things to our bodies. She is also ordering yet another herbal remedy to help balance my wacky body. I am already feeling a HUGE difference though. I have not touched anything ‘illegal’ since my visit on Friday!! Whew!

So, now that I am not wanting to eat everything in my town, here is what I am doing. I have been fixing this raw cereal every night before bed to have the next morning and it is really satisfying me.

I know, it’s not very pretty, but it works for me:) Before bed, I put the following in a bowl: 1/2 cup quinoa flakes, 2 tbs. sunflower seeds, 2 Tbs. pumpkin seeds, 1 Tbs. hemp seeds, and 1-2 Tbs. raisins. Then I add 1/2 cup coconut milk and 4 Tbs. coconut water (which sweetens it all). I put this in the fridge until morning. Then I add 1 Tbs. hemp protein powder and some cinnamon. Mix and dig in:) Soaking things is key for me to have a happy belly! Last night, I actually soaked the seeds and raisins seperate in some water left out on the counter. I think they ‘soak’ better that way. That keeps me happy for a good while.

Then about mid-morning, I make some green juice. Today, I tried cabbage in my juice after seeing that on Maggie’s blog. It was yummy. No picture though, because it went down the hatch:) Thanks for the idea Maggie!

I have been able to wait longer to eat drink lunch since doing the raw cereal and juice. I have really just been wanting smoothies for lunch.

I’ll usually have a snack involving a little fruit in the afternoon. Yesterday, I was inspired by Averie to pull out my ice cream maker. I made a sorbet with frozen cherries, strawberries and half banana. Oh, I also added 2 Tbs. raw cocoa nibs. Blended it up and threw it in the ice cream maker:

If anyone makes this, you may want to add some agave or something. It wasn’t quiet sweet enough, but it worked for me.

For dinner, I have been having a BIG salad! No pictures–oops!

I also recently came up with a bread recipe that I can finally feel good about eating. I will post more about it another day, but I made my own flour with sprouted and dehydrated buckwheat, quinoa, sunflower and pumpkin seeds. The only other flour in it is a little coconut flour. I have always hated the fact that gluten free breads are loaded with all kinds of starches–that I can’t digest–and they are usually pretty refined and high carb. My homemade bread doesn’t have any of the typical starches in it, is pretty good in protein and not refined and high carb. I took a piece to my ND to let her try it and she loved it! So, now I have a  sprouted bread that is technically grain free and very healthy:) YUM!

Gotta run now, today is our first day of another year of homeschooling:)

Added note: I think I have had too much of a good thing with the seeds in my raw cereal! I tend to quickly forget that I can’t do so many seeds three days in a row! My belly is NOT happy at the moment. So, I am trying a new raw breakfast in the morning. Stay tuned:)

This blueberry frozen yogurt was my dessert after doing about 70 minutes of HOT yoga (at home) and then later going for a 3 mile walk. Whew! This was inspired by Polly’s “bloothie” that I saw on her blog today. Thanks Polly:)

1-1/2 cups frozen blueberries

4Tbs. vanilla protein powder

1 Tbs. raw honey

1 tsp. guar gum

I usually try not to use sweeteners, but I was using hemp protein powder and I thought it might need some help:) I put all ingredients in the food processor and blended until smooth. Then processed in ice cream maker until thick and creamy. You could definitely use a different protein powder, I know a lot of people don’t like hemp. This made two servings.

I am also O-U-T of spinach! Heaven forbid!! Oatgurt and spinach shortage on the same day! And, I was going to challenge myself to not eat sunbutter today. THAT DID NOT WORK!  Do you know where I’m going tomorrow? Yep, grocery shopping to get lots of yummy green spinach and I have oatgurt fermenting as I type:) I guess I might survive after all. For now, I am going to chill out as I have been rather HOT today:)

This may be a lengthy post–so hang on to your hats:)

Today has been an interesting day. I woke up at 4:30am with my tummy still rebelling from something. The key word there is ‘something’! By 6am, I was starving! So, I had some ice cream. Ice cream for breakfast is always a good thing and this ice cream was SO healthy–I didn’t even have to feel guilty.

blog pictures 448This was inspired by Heather’s green ice cream. I don’t remember exactly what I put in mine. I know it had coconut milk, coconut milk yogurt, spinach, PlantFusion protein powder, carob, honey and guar gum. When I got it out of the ice cream maker, I thought it looked just like mud! Well, it certainly didn’t taste like mud. I had it for dinner last night because I didn’t feel like eating anything else and then had it again this morning.

With my ice cream breakfast, I also had my sprouted bread that I mentioned in the last post. Sorry, no picture! I had to put it promptly in the freezer to keep from gorging on it. It was THE BEST gluten free bread I have EVER made!! I have read that soaking grains makes them taste better and boy am I a believer! I am now experimenting with a fermented (kind of like sourdough) gluten free bread. Guess what I’m using for the ‘sourdough’ starter–OATGURT! WooHoo:) I am trying to get away from using tapioca and arrowroot starch. The fermented bread doesn’t have startches like that. It is also yeast, dairy and egg free–without me having to tweak it. Gluten Free Sprouted/Soaked Multi-Grain Bread

I had an appointment with my nutritionist today. It was pretty depressing. Basically, she doesn’t know what to tell me anymore. It’s NOT her fault. My body just has a mind of it’s own and it doesn’t want to co-operate. She has told me everything she knows to tell me, and well, things just aren’t working. My food diaries are not very helpful these days because most of the time, there is no rhyme or reason for my pain.  The only good news was that I have maintained my weight since my last visit. So, after THREE years of her trying to walk me through my eating disorder and my Celiac and other food allergies, I walked out without making another appointment. I have been a HARD case for her! I walked out feeling like a hopeless case–BUT I CAN’T let myself stay there! So, what did I do?

blog pictures 452I bought a book:) Have I ever told you what a SUCKER I am for books? Well, I LOVE books! Unfortunately, that is what I want to buy when I’m feeling bummed out. Now, you may be asking yourself why on earth I bought a raw food book. Good question:) Am I going raw? No. I bought it because it talks a lot about fermenting and soaking and sprouting. I am ALL into that these days! Plus, it has really pretty pictures! I love books with pretty pictures even more than boring books:) My hubby will probably shoot me when he sees it, but I figure with all the money I’m going to save by not going to the nutritionist–Hey, this is cheap! By the way, if you are interested in the raw diet, you should check out LovIN my tummy!

I have had an extremely long and hard work week. I have been cleaning a new construction home that my brother built. I also had my regular clients to clean for.  So, I am wiped out!! I don’t know why, but when I work really hard like that–I usually always end up eating bad. I do okay during the day and then–boom! I feel like I haven’t eaten in a week and I want to eat everything in the house. And yes, that includes gluten. Daggone it! When will I learn?  So, I am fessing up to blowing it tonight. I then proceed to take a stomach pill so that I can be knocked out for the night without too much pain. Stupid, I know! Okay, I got that off my chest:)

My hubby helped with my two coconuts I got the other day. We made a royal mess!

Here is what you don’t want to do when cutting a coconut!

blog pictures 412OUCHIE! You can see the mess on my counter. I have coconut water in the fridge and I froze the flesh until I can decide how I want to use it. It was fun to buy a real coconut and break it open etc., but as you can see, I am not very good at getting the meat out without injuring myself.

Now for something a bit sweeter.

blog pictures 417I have recently discovered a new love! I have never been a huge cherry fan–until I bought frozen ones. Yesterday for snack, I put some cherries in a bowl with 1 Tbs. dark chocolate chips and 2Tbs. coconut milk. That was the best treat I have had in a long time!

blog pictures 427Another yummy (and legal:) thing I ate today was oatgurt with 1/2 banana and 1 Tbs. sunbutter. I went to the health food store yesterday and got more sunbutter and gluten free oats. We are back in business! I have figured something out though that I’m not all that happy about. I have discovered that when I eat very many carbs (aka. banana w/ oatgurt) it makes me crave more carbs. That’s usually where the cheating with gluten comes in.

It seems like the only grain that I am able to eat these days is the oatgurt. I usually have it with plenty of protein though so it doesn’t make me want to binge. I’m guessing that banana and oatgurt is not going to happen anymore. I do fine eating oatgurt without all the sugar in the banana. By the way, I will be forever grateful to Heather for introducing me to oatgurt:)

Okay, I think I’m rambling. It is way past my bedtime and I am beyond the point of exhaustion. Tomorrow, I am planning to do some yoga first thing and then really focus on feeding my body good wholesome foods–no gluten!

Oh, just a funny note about how my yoga practice is going. I am pretty new (3 weeks or so) to yoga. Well, last night, I had the bright idea to try a headstand against the wall. I think my brain was on vacation. Anyway, I got up and it felt good all over–except my head!! I thought my head was going to cave in! I think I’ll stick to shoulder stands since I can actually do those without any major malfunction:) I am LOVING yoga though. I think it is really helping my digestion and helping me to really listen to my body. Now, if I would just quit listening to my brain when it has stupid ideas–I might be alright:)

I wanted to let everyone know that Nourishing Days is having a free give away for the book ‘The Ice Dream Cookbook’. I don’t know about you, but I LOVE ice cream. I can’t do dairy though and don’t want to pay for dairy free options, which a lot of them are loaded with weird stuff anyway. I have an ice cream maker, but for the recipe shared on Nourishing Days blog, you don’t even need one. I would love to win this book and have all kinds of yummy recipes to try through the summer. Have you ever just had such a craving for chocolate that you thought you would die if you didn’t get some ASAP? Well, I had one of those cravings today. Unfortunately, it began during church and there wasn’t a thing I could do about it at the time. Then after church, my husband and I went to a few places looking for Christmas gifts. Needless to say, I had to wait to get my chocolate. I was SO tempted to just cheat and get something illegal while we were out but I didn’t:) Now, when on the SCD, chocolate is illegal-period. But, since I am no longer doing the SCD, I thought I would treat myself to some gooey ice cream. I had some coconut milk that needed to be used so I decided to use that for part of the ice cream. I also used some goat yogurt which gives me the good bacteria I need. I am currently not using ANY sugar AT ALL and it has about killed me! I am still struggling with yeast pretty bad so am not eating fruit, sugar or grains. Also take out almond meal and that leaves a pretty hard diet. I have been mainly eating lean meat and veggies. Okay, so back to the ice cream. I have been craving a treat that tasted like a real treat. I am using Stevia as my sweetener and am getting used to it, but it doesn’t always produce the same taste that regular sugar or honey would give. I didn’t really have high hopes for this ice cream because of that. As the ice cream was churning I was already preparing myself for disappointment. I had almost decided that if it didn’t turn out, I was going to the store and getting some real ice cream! Well, it turned out great!! Thank goodness! I really don’t need to be feeding my yeast problem with real ice cream:) Now, I don’t know if this just tasted so good to me because I am getting used to the stevia or if it really tasted that good. I am not asking for any taste testers though. They can have their own ice cream:) I will just say, this made my WEEK!!!!

1 cup coconut milk
1 cup goat yogurt(could use all coconut milk)
5 TBS unsweetened cocoa powder
5 tsp. stevia powder
2 eggs

Place coconut milk in small saucepan on low-med. heat. Add cocoa powder and stevia and heat until cocoa and stevia have dissolved completely in milk. Let cool. Add goat yogurt. Whisk eggs and add to the rest of the ingredients. Make sure eggs are mixed in good. Pour into ice cream maker and let run until thickened. Enjoy and try not to eat it all at once:)
If you don’t own an ice cream maker, you should add one to your Christmas list. I LOVE mine!
