I have had a couple of people ask about the recipe for the coconut flour bread that I am eating these days so I thought I would post it today. I originally found the recipe at Life As A Plate. I just found this blog not long ago and I am ever so glad that I did! I have made several changes though and thought I would show you what I do. Actually, my daughter usually makes this for me 😉 I think I’ve only made it once.

Coconut Flour Bread

I didn’t change much from the original recipe but I needed it to be dairy free. I used to use real organic butter in the bread before I realized I needed to cut out dairy. It was SUPER yummy with real butter! Now, I am using Earth Balance dairy free/soy free butter. It’s good that way too. Anyway, here is the recipe my daughter makes for me:

3/4 cup coconut flour

1/4 cup flax meal

2 Tbs. arrowroot

1/2 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1 tsp. onion powder

1/8 cup sesame seeds (I leave these out due to tummy)

7 eggs (you can get away with only 6 eggs)

1/4 cup melted butter or coconut oil (original recipe calls for 1/2 c.)

2 Tbs. full fat coconut milk (original recipe calls for sour cream)

Combine dry ingredients except 1 Tbs. sesame seeds if using.

Combine eggs and coconut milk (or sour cream) and beat into dry mix~then add butter or coconut oil.

Pour into greased loaf pan and sprinkle with remaining 1 Tbs. sesame seeds if using. I use a small loaf pan~not a regular size but not mini loaf either~not sure what size mine is exactly because I’ve never measured it 🙂

Bake @ 325 for 40 minutes. I always cover mine with foil after the first 15 minutes to keep top from burning but your oven may be different than mine.

Let cool in pan for a bit then take out of pan and cool the rest of the way on cooling rack. Slice and enjoy! A BIG thank you to Life As A Plate~this bread has changed my life! 🙂

Okay, now I have a small confession to make.  I ‘cheated’ on my ‘diet’ last night! I ate a couple of things I wasn’t supposed to! Cereal has always been one of my favorite foods and when I’m tired and don’t feel like making anything else, I WANT CEREAL!! Why am I telling you this? Because I don’t want people to think that I have it all together and I never cheat!! I am not always the best at doing what I’m told to do to better my health 😉 I WANT to stick to the ‘diet’ that has been prescribed for me, but sometimes, I’m weak and cave. Any tips you may have would be greatly appreciated! 🙂

I know, Christmas is long gone, but I’m making a different kind of list. I’m back to Living Free after a long break! I have been blogging at Heart, Soul and Strength lately . That blog is mostly about health stuff, but I have found myself wanting to talk about FOOD!!

I am currently on a gluten free, grain free, dairy free, sugar free (not even stevia), low oxalate diet! What a mouthful! So, the other day I was feeling completely overwhelmed by all of this and I thought ‘I just need to make a list!’. I started going through the low-oxalate food list and grain free cookbooks and writing down different possibilities for meals that meet all of my dietary restrictions. That way, when I feel lost and overwhelmed, I can just go to my list and pick out a meal~and KNOW that is it safe 🙂 Whew!

Normally when people go grain free, they rely more on nuts and nut flours, but I can’t do that because of oxalates. My stand by flour these days is coconut flour and I LOVE it! Anyway, I wanted to show you what I had to eat yesterday.

Spirulina smoothie with 2 boiled eggs

I had been stumped as to how to make a smoothie with NO sweetener of any kind. My fruits are pretty limited due to oxalates so no bananas in this baby! Then I remembered~coconut water! I used 3/4 c. coconut water, 1/4 coconut milk(canned), 1 tbs. ground flax, 1-1/2 tsp. spirulina powder, frozen mango and pineapple.

Lunch:

Chicken, mashed cauliflower, coconut flour bread w/ avocado

That’s not a very good picture, but I can assure you, it was delicious! I cooked the chicken in wheat free tamari and some herbs and had garlicky mashed cauliflower. The bread and avocado were just the icing on the cake 😉

Dinner:

Salad, beef and broccoli~chinese style and coconut flour bread

Again, terrible picture (gotta work on that), but tasted heavenly. I actually used deer tenderloin instead of beef. So, yummy! The deer and broccoli had sesame oil and lots of garlic. I planned on cooking cabbage with this, but ran out of energy. Never fear, this is a meal we WILL be having again!

My Dr. only wants me to eat every 5 hours and all of these meals kept me plenty satisfied until time to eat again 🙂 WooHoo!! Off to a good start on my ‘list’!

While we were in Florida last week, my hubby ordered something that I was VERY skeptical about. I told him I don’t know how many times that he probably shouldn’t have ordered it, but the deed was already done. I was thinking there is NO WAY I would use what he ordered–until today. What I am referring to is the P90X system! Now, before you say I’m stupid let me just say that after watching a couple of the workouts, I am pleasantly surprised! Before watching, I was thinking this is going to be WAY too hard core for me. Also, how would I get my love of yoga in, and what if I couldn’t do it or if I push too hard. Well, from what I watched it IS pretty hard core, BUT Tony Horton stresses to do what you can and that’s enough! I like him better already 🙂 One of the things I am MOST excited about is he uses A LOT of YOGA–YEEESSS!!!! Even in the Cardio x, there were sun salutations. 

Another reason I am willing to give this a shot is to have something my hubby and I can work towards together. AND, honestly, I have been in an exercise rut lately. We are hoping to start on Monday, so if you don’t hear anything from me after that–you’ll know I died–lol!!

Changing the subject now, have you ever woke up starving but NOTHING sounded good? That happened to me this morning! I went to the fridge about a dozen times trying to see if anything seemed like it would hit the spot and–nothing. I finally just decided to go with a regular breakfast of eggs and yogurt even though I wasn’t really feeling it.

That was all fine and good but about two hours later I needed 2nd breakfast.

Since I am not doing spinach any more due to oxalates, I have been making green smoothies with pure spirulina powder. My life without spinach isn’t so bad afterall 🙂 I usually use water, 1 cup fruit, 1 Tbs. ground flax, sunflower seeds, maca powder, spirulina and raw stevia–yummy, and holds me for hours–usually. I have been drinking this and lots of fresh veggie juice since I have been home from vacation and it is really good for my tummy.

Oh, and look what I found at the health food store yesterday–SO excited!

Gluten/Dairy Free Burrito!

I know, it doesn’t take much to excite me! Sometimes I just crave a good burrito! This didn’t stay together very well when I cooked it, but it hit the spot!

I LOVE the Raw Revlolution bars but it takes me days to eat one. The mini ones are perfect!

Last but not least, I’ll leave you with a new ADORABLE picture of the babies 🙂 They are growing so fast! I could just sit and watch them forever. TOO CUTE!!

HI all my bloggy friends!! I’m so glad I finally figured out how to get on my blog. I tried last night and had trouble logging in. I am in Florida and using someone else’s computer. Therefore, pictures will have to wait until I get home 😦  That’s a shame because I had a wonderful meal at none other than Whole Foods yesterday! If you don’t know already, we don’t have a Whole Foods anywhere near where I live so it’s a real treat when I get to go to one.

We arrived here yesterday around 1:30pm. We drove as far as we could on Friday until hubby got too tired. We stayed in a little rinky dink motel and started again the next day. On the way down Friday, we ate at Mcallister’s. I got a salad with grilled chicken, cranberries, almonds etc. It was REALLY good!

Yesterday, my eating got screwed up a little just because of wanting to get here. We basically skipped lunch which is never good. By the time we ate, I was starving to say the least! That’s where Whole Foods came into the picture! Just for record, my meal weighed in more than my hubby’s! Told ya I was starving!! We then had to go grocery shopping. I did get a few goodies at WF but not anything to feed us for the week. It’s so funny when hubby and I go grocery shopping together. We eat totally different! So, I pretty much get everything I need (a.k.a. LOTS of veggies and some fruit) and then he picks out what he wants (a.k.a. frozen pizza, chicken patties etc.) He did say he was going to eat salads with me for lunch though, so that’s a start 🙂

After getting settled a little, we headed to watch the sunset on the beach. It was breathtaking!!  Can’t wait to show you all the pictures that we will have by the time we get home!

I got up and went for a walk/run this morning while he is enjoying some much needed rest. He’s still sleeping–hence the time on the computer for me. I think I need to get out earlier tomorrow morning, because I’m tellin’ ya the humidity will get ya! I was SO tempted to take my shirt off!!

I’m getting ready to go have a green smoothie minus the greens! Spinach is a long lost friend now due to it’s HIGH oxalate levels, but I can still have a green smoothie. I’m using pure, raw, dark green spirulina powder. My kids say the powder is so dark it looks black! It is very good for you, high in protein and chlorophyll. I plan on sharing more about this smoothie at another time.

Well, hubby is awake and that’s my cue to get off of here. I’ll be updating while here, but like I said–no pics until I get back. Sorry about that! I tried everything I knew last night and could not get it to work. I think I need to have the software for my camera on this computer and I don’t.

I AM POOPED!!!! My week is proving to be a challenge. Something happens when you know you are leaving for a week of bliss and you still have to get through several days of work! UGH 😦 I have to work a half day tomorrow and Friday and then I am out of here! Is Friday EVER going to get here?

I don’t know if I mentioned that we (my hubby and I) are headed to Florida-I mean I know I said we are going to the beach, but I didn’t say where. Of course I HAD to get online and see if there is a Whole Foods anywhere within driving distance. I’m willing to go pretty far, but I don’t think the hubby would like it. Anyway, I am happy to report that there IS a Whole Foods about 25 minutes from where we are staying. Twenty Five minutes is nothing when you live in the country like I do. I’m thinking anniversary dinner at Whole Foods–just kidding 😉 I WILL however eat there at least once and do some shopping.

I just got back from an appointment with my ND. We are trying some new natural stuff for my hormones etc. I haven’t really shared much about all that stuff but my OB/GYN had put me on Vagifem (even though I am not post menopausal yet). She said that it wasn’t absorbed throughout my whole body so it should be perfectly safe. After MUCH reading about it, I have decided I want to stop using it. I have nothing against anyone who chooses to use it, I just don’t feel it is best for me. I’m really praying that the natural stuff will do the trick.

We also talked about oxalates and how they may be affecting my female problems. I have been doing TONS of research about oxalates and found it very interesting that some people with digestive disorders tend to absorb too many oxalates. It’s amazing what all a defective gut can affect! Anyway, the verdict is–watch oxalates pretty closely, but can have higher oxalate foods occasionally. I also learned that if I am going to eat high oxalate foods, I should make sure and drink plenty of water before and after eating to help flush the oxalates out. I haven’t had spinach in DAYS!! I did have some raw almonds today but that was the only food relatively high in oxalates that I had.

Sorry this is a boring pictureless post, but I haven’t even been able to think about stopping to take pictures–just trying to get through my days!
