I got up this morning really dragging! I went out to sit on the deck to just chill for a bit. While I was sitting out there, I kept thinking things like “I really should go for my walk, I really should get ready to go to town, I really should do some house work” etc. etc.!! Then the thought occured to me-“WHO SAYS that I have to exercise in the morning instead the afternoon or evening, and WHO SAYS that I have to be in town by a certain time, and WHO SAYS that I have to spend my day off cleaning when that is what I do all week as my job”? So, I ended up talking on the phone with my mom for a while and just chillin’. It felt good to not pressure myself for a change!

I eventually came inside for breakfast but couldn’t decide if I wanted eggs or a smoothie. Well, WHO SAYS I can’t have both?! I fixed some eggs and this yummy spinach smoothie:

I have learned that I don’t do real well with bananas, so I usually use strawberries in my smoothies. I have also learned that strawberries aren’t quite sweet enough to take the green taste away. So, I have been sweetening with this:

I only have to use about an 1/8 of a tsp. and my smoothie taste like a strawberry shake. WHO SAYS I can’t have a shake for breakfast? 🙂 I used 1-1/4 cups unsweetened almond milk, 1 cup frozen strawberries, 1 Tbs. hemp seeds, stevia and gobs of spinach.

For lunch, I really wanted a sandwich. I found some all natural turkey that I think I’m in love with. I had seen on Greek Yogurt’s blog some buckwheat pancakes and the thought occured to me to use that for my ‘bread’. WHO SAYS I can’t have a sandwich on pancakes?

And for dessert (you know I HAVE to have dessert:)

1/4 piece of bread w/ smidgen of sunbutter and all fruit preserves

I then ended up having to take Samson to the vet which was VERY traumatic for him! He is okay–on antibiotics and deworming meds. He also has a boo-boo on his head that she had to shave and clean up a bit. The visit cost me an arm and a leg, but hey, at least I know he’s okay 🙂

I finally got around to exercising! WHO SAYS yoga can’t make ya break a sweat?! I did this yoga circuit workout and it always kicks my tail!! When I first found this workout online, I thought it looked pretty easy–well, the first time I did it, I was VERY sore the next day!! Depending on what kind of yoga you do, it can be just as good a workout as weights or anything else. And the advantge of doing yoga–you get to lay on the floor when you’re all done 😉

What are some ways that you tend to pressure yourself to do things a certain way–ex. exercise at a certain time etc.? Can anyone else relate to me on the WHO SAYS revelation?

Hi everyone! I can’t believe it has been at least a week and a half since I last posted!! Man, time flies when your having fun busy. This post may be a little random because I have several things to share that are not related to each other at all 🙂

The first bit of interesting news is that I got my ears pierced stapled! No, I am not some kind of hippy or anything. These staples are a form of acupuncture that you leave in. You can read about it here.

If you read about ear stapling, you would see that a lot of people do it to try to lose weight. That is NOT why I had it done. It is not just for weight loss. My ND recommended it to help balance my hormones and energy and to help with sugar cravings. She obviously thought it would be very beneficial to me because she did it for FREE! I probably wouldn’t have had it done if I had to pay for it, but I figure if it’s free it’s not going to hurt to try. At least I know she wasn’t just trying to sell me something 🙂 Speaking of hurting, you may be wondering if it hurt. Umm, yeah! Not extrememly bad pain, but enough. It hurt worse after it was over and they (I have one in each ear) were very tender for several days. The worst part was when I would forget they were there and go to scratch my ear! NOT good! I also had some trouble sleeping with them in the first couple of nights.

So, today is day seven since having this done and what have I noticed? The first thing I noticed was a decrease in depression! That alone is fabulous! Then I started to notice an increase in energy–woohoo! I kept wondering when the sugar cravings would improve. The first few days I could still be very tempted by sugar.  On about day 4, I noticed a dramatic improvement in my cravings! THAT IS A MIRACLE!!  You guys probably have NO idea the struggles I have had with sugar cravings. That’s not something I really talk about on my blog. All in all, I think the staples are helping me and it was worth the momentary pain 🙂

Okay, enough about my ears! I have been following a low-carb diet due to candida and I was SO excited to find this new protein powder yesterday!

This is Healthy N’ Fit protein powder and it is 100% egg white protein. What made me so excited about this powder is the fact that it only has stevia in it for a sweetener. So many other protein powders still have fructose etc. in them! It is also loaded with amino acids. How does it taste? YUMMY!! I had my first smoothie with it this afternoon.

This is a spinach smoothie with almond milk, a few frozen cranberries and 1/2 cup plain unsweetened yogurt added in. Perfect! Now, I know there are a lot of Jay Robb fans (Hi Heather🙂 out there, but this stuff is cheaper! At my Kroger, Jay Robb is $22.00 for 10 servings. The Healthy N’ Fit was $35.00 for 34 servings!! I have to go with the cheaper! I have never tasted Jay Robb due to the cost, but I really felt like this was worth it.

I have been feeling great on a low-carb diet (and the staples:)! I am doing yoga some and some other workouts–like the FIRM. I really want to feel stronger! I think I am what a lot of people would call ‘skinny fat’. I’m at a low weight, but don’t have a lot of muscle. Hopefully, my diet and exercising will help me gain some of the muscle I lost when I was struggling with an eating disorder. I have been thinking about doing the P90X workouts. I’m not trying to get ‘ripped’ or anything, just stronger with less fat and more muscle. Anybody ever done those? What were your thoughts? I really don’t want to kill myself! I am also wondering if I do harder workouts, will it make my weight go up due to gaining muscle. If it does, that’s okay, as long as I know it’s from muscle and not overeating or gaining fat! Would appreciate your input 😉

This post is getting pretty long, but Clare gave me a sweet blog award about two weeks ago and I am just now getting to it!! Terrible, I know! I am supposed to tell 7 random things about myself so here goes.

1-I am pretty OCD about some things but not others. For ex. I HATE crooked pics, open cabinet doors and I CAN NOT buy something that is dented!! But, as for keeping my house spotless–I gave up on that years ago!!

2-I have homeschooled my (3) children most of their lives. MANY ups and downs on that one–mostly ups though 😉

3- I LOVE animals!! We have three dogs, two cats and two turtles (those are my daughter’s) I think she loves animals even more than me!

4-I am a book addict!! Mostly cookbooks, as you know if you have been reading my blog long.

5-I LOVE fried okra, but sadly can’t eat it anymore! Hey, maybe I can make it and coat it in almond flour!

6- I HATE beets and kombucha!

7-I was born three days before my brother’s first birthday. I bet he thought that was the WORST present EVER!

This Face!

Meet Samson

If you are a regular reader of my blog, you know that my sweet Eli passed away back in October. I have missed him terribly!! I have been going to the pound over these last several weeks just waiting to see if the right dog would come along for me to rescue. I went last Saturday and they had gotten in SEVEN Cocker Spaniels! They think it was some back yard breeder who decided they didn’t want to fool with the dogs anymore. It is really sad! Anyway, I don’t even want to get into how cruel and pitiful it is to take dogs to the pound! As you can see, one captured my heart:)

Samson is around two years old and scared to death. The poor thing evidentally has not been given much attention. He needs LOTS of love and a feeling of security. Hopefully, I can give him that:) I just got him yesterday and he is already beginning to realize that he is not going to be hurt.

I encourage anyone looking for a new dog to check out their local shelter. Lots of lives could be saved and lots of love can be given to these dogs that are just left for dead!

Now, for some food drink! As I’ve been typing this, I’ve been enjoying a HEAB’S inspired pumpkin smoothie. It is so NOT raw, but oh so good!

My smoothie contained:

1 cup light soy milk

1/2 cup water

1/3 cup pumpkin

packet of stevia

1 scoop PlantFusion

cinnamon

nutmeg

This whole raw thing is hard! I do really well for about 3-4 days and then I just want to eat whatever and not worry about whether it’s raw or not. I guess that’s okay though. As long as I’m still getting a lot of raw, I think having a day every now and then that I have less raw should still give me the benefits of raw that my body needs. Okay, that was a confusing sentence! Anyway, trying not to stress on the days I want less raw:)

blog pictures 835I tried a new grain free concoction yesterday. I found this recipe on the SCD web-site and then changed a few things. I have never really thought to put apples and egg together before, but really liked it. You can find the original recipe here. Here is what I did though:)

–cooked 1 green apple cut into small pieces (cooked in a little coconut oil-I also added a little water to the pan to help soften up the apple)

–added cinnamon and 1/4 tsp stevia

–after apple cooked until soft, I added 2 eggs and scrambled it all together

–when done, place in bowl and top with a dollop of yogurt and pecans

Another favorite of mine lately is this:

Coconut milk yogurt w/ frozen berries and pecan piecesI have been loving homemade coconut milk yogurt with frozen cherries and blueberries and then topped with pecan pieces. All I need to say about this is–YUM!

I did get to go skating last night. I still didn’t feel the best, so I would skate a little and rest a lot! Had a good time with my kids and hubby though.

Oh, this was pretty funny. When we paid to go in and I was letting the lady put the arm bracelet on me, she said “You’re going to be brave and try to skate?” Uh, hello–I may be 40, but I’m NOT dead yet!! I DO know how to skate. The most challenging part of the skating was having to go to the bathroom–with skates on:)! My mom’s friend said I must be having a really hard time turning 40 because I wanted to go skating! What is wrong with these people? Am I supposed to stop having fun just because I turned 40? Good grief!!

Hope you all had a fabulous weekend! Did you do anything fun? I’m learning that life goes by too fast to not enjoy it!

Hello all you lovely bloggers/readers! First of all, I am officially 40!! My B-day wasn’t exactly what I had planned because I woke up with a TERRIBLE bladder infection! Wow–talk about PAIN ALL day long! But, I was able to go to a really cool vegetarian restaurant for dinner. By the way, this post will be picture-less because my camera battery is DEAD and I didn’t realize it until it was too late to charge it:( Anyway, I was a little a lot concerned about my hubby going to this veggie place. He is all about the meat and tators! After looking the menu over, he decided to get grilled Salmon with asparagus and roasted sweet potatoes–there’s his tators. He ended up LOVING it!! He just went on and on about how yummy it was. Well, he didn’t exactly use the word ‘yummy’, but he raved about it none the less. I got a tofu and veggie dish that was to die for! The waitress made sure it was gluten free and I ordered it without the rice. It had this amazing sauce that had kind of a peanutty taste but was a little spicy too. All I can say is YUM! I thought I might try to recreate a dish similar to this at home. I’m pretty sure Heather has a sauce recipe that would be great–like tahini:)

Okay, on to the ‘I think I’ve got it’ part of my post. I have been taking a break from blogging a bit lately. Part of my reason was to have more time for other things, but I have also really been trying to figure out what works for my body. Sometimes, when reading a lot of other blogs, I can get a little sidetracked from what is best for ME. I tend to follow the crowd more times than not and it was getting me in trouble. So, after less blogging/reading, I think I have a semi-plan that will work for ME. Here are the basics:

1- I have finally accepted the fact that my body can NOT handle grains of any kind! I know grains are not bad themselves and carbs are not bad. But, MY body does NOT like them no matter how much I tried to make it conform to what I wanted! Therefore, I am now on a totally grain free diet. I could tell a difference in TWO days of cutting them out:)

2- I have also learned that I can not do sugar of any kind–no agave, honey, etc. I have only been using Stevia and am a-okay:) I can have really dark chocolate though!!:) YeeHaa!

3- Fruits: cherries, blueberries, strawberries–okay all berries, green apples(tart), and very small amounts of banana every few days.

4-Veggies: all veggies except potatoes, yams, and corn. Do NOT do well with starches! Veggie choices are endless and I LOVE trying new ones!! Still juicing some and making sure I eat some raw veggies every day.

5-Dairy: the jury is still out on dairy! I have started introducing homemade yogurt that is fermented 24 hours the SCD way. Once it ferments that long it is virtually lactose free. I do a little Parmesan and other than that, that’s about it for now. I have mostly been making homemade coconut milk yogurt, but hopefully can handle the organic cow milk some too.

6-Protein: I have decided that a vegetarian diet is what feels best to me. I will have eggs occasionally because I feel like my body needs them. I have been back and forth about the whole soy debate and have decided that a little soy once or twice a week should be fine. I also do really well with beans that have been soaked 24 hours and had the water changed several times during the soaking. Soaking breaks down a lot of the starches and they are a good source of protein.

7-Nuts and seeds: Nuts and seeds are also good sources of protein. I have found that I can do pecans and a smidgen of almond butter every now and then. I can make grain free bread from pecan flour that is really yummy! I also do well with sunflower and pumpkin seeds–and of course, LOVE sunbutter!

8-Fats: nuts/seeds, coconut milk, coconut oil, olive oil

9-Exercise: Can’t forget exercise! Yoga is what I LOVE best, but have found that I also like doing walking/running intervals. Nothing too long or strenuous, but enough to get my heart pumping. Usually, thirty minutes on the treadmill 3-4 days a week is what feels best to me. More than that really seems to bring me down physically.

I think that about covers it! I know this was really long, but it helps me to get it on ‘paper’. Hopefully, I will start posting some yummy grain free recipes soon:) Have a lovely weekend! I’m hoping I get to go skating tonight since I didn’t feel like it on my B-day.

COCONUT!!

I don’t know what is up with me and coconut mishaps lately, but boy am I getting annoyed! Okay, let me back up. In my last post I was sharing how my blender was messed up and caused all sorts of problems in my attempt to make coconut milk. Well, a couple of days ago, I was making raw coconut milk–in my NEW blender–and I was planning on using the pulp from the coconut milk for something else.

blog pictures 686After making this milk, I had the towel that I squeezed the milk through laying on the dehydrater. I was planning on drying the pulp to use it in some raw coconut treats that the ND said I could try. Well, about two minutes before I was ready to put the pulp in the dehydrater, my son walked in. He proceeded to pick up a towel to dry his hands and guess which one he picked?! Yep, the one that had coconut pulp in it! My beloved coconut went ALL over the floor! It was a total accident, but I cried none-the-less. No pictures of the mishap because who wants to take pictures when they are crying! Well, I got over it and my hubby went and bought me more coconuts the next day:) I just have to start over now for the raw dry coconut treats.  I have heard the saying all my life–“Don’t cry over spilled milk” but in my case it was coconut!

Here is another new coconut experiment that I made lately.

blog pictures 677Wine cooler anyone? This isn’t really a wine cooler, but I bet if I drank enough of it, I could get pretty toasted! This is coconut water kefir diluted with plain coconut water and cherries. This kefir is POTENT!! You can read here how to make it and the benefits of it. It does have sort of a wine cooler taste which I am not a big fan of. It’s not bad diluted though because the plain coconut water sweetens it some. There is NO way I could drink this kefir straight! Anyway, just some food drink for thought.

Another experiment:

These were pretty tasty, but a little hard on my sensitive gut. If I make them again, I would also try to slice them a little thinner. I put them in a gallon size bag with coconut oil, cinnamon and a little salt and shook to coat. Then dehydrated until crispy.

Lunch yesterday:

This is something else the ND told me about (only she used carrots). I blended up spinach, soaked sunflower seeds, green onions, cumin and I don’t remember what else. Made into patties and dehydrated.  I made these pretty thin, so I actually had two patties in this ‘burger’.

Last, but not least, is my breakfast from this morning:

This is NOT the typical cookie with oats. I have found that I do better when I don’t eat oats–even gluten free ones. This cookie is made with Quinoa Flakes. I know some people (Heather:) are not a fan of these flakes, but when it’s the ONLY ‘grain’ you can digest, you learn to make the best of it:) Quinoa is not even technically a grain. Anyway, I put quinoa flakes, 1 Tbs. hemp protein powder, 1 Tbs. raw sunbutter, raw coconut milk, organic raisins(new food for me–keep your fingers crossed), raw agave,  and cinnamon. I try not to use agave much at all, but felt like this would need it since quinoa does have a distinct flavor. I am allergic to stevia so that is not an option for me. I let the cookie sit in the fridge over night and gobbled it up after yoga this morning! I WILL be making this on a regular basis! You can find the original recipe here.

Have you ever just had such a craving for chocolate that you thought you would die if you didn’t get some ASAP? Well, I had one of those cravings today. Unfortunately, it began during church and there wasn’t a thing I could do about it at the time. Then after church, my husband and I went to a few places looking for Christmas gifts. Needless to say, I had to wait to get my chocolate. I was SO tempted to just cheat and get something illegal while we were out but I didn’t:) Now, when on the SCD, chocolate is illegal-period. But, since I am no longer doing the SCD, I thought I would treat myself to some gooey ice cream. I had some coconut milk that needed to be used so I decided to use that for part of the ice cream. I also used some goat yogurt which gives me the good bacteria I need. I am currently not using ANY sugar AT ALL and it has about killed me! I am still struggling with yeast pretty bad so am not eating fruit, sugar or grains. Also take out almond meal and that leaves a pretty hard diet. I have been mainly eating lean meat and veggies. Okay, so back to the ice cream. I have been craving a treat that tasted like a real treat. I am using Stevia as my sweetener and am getting used to it, but it doesn’t always produce the same taste that regular sugar or honey would give. I didn’t really have high hopes for this ice cream because of that. As the ice cream was churning I was already preparing myself for disappointment. I had almost decided that if it didn’t turn out, I was going to the store and getting some real ice cream! Well, it turned out great!! Thank goodness! I really don’t need to be feeding my yeast problem with real ice cream:) Now, I don’t know if this just tasted so good to me because I am getting used to the stevia or if it really tasted that good. I am not asking for any taste testers though. They can have their own ice cream:) I will just say, this made my WEEK!!!!

1 cup coconut milk
1 cup goat yogurt(could use all coconut milk)
5 TBS unsweetened cocoa powder
5 tsp. stevia powder
2 eggs

Place coconut milk in small saucepan on low-med. heat. Add cocoa powder and stevia and heat until cocoa and stevia have dissolved completely in milk. Let cool. Add goat yogurt. Whisk eggs and add to the rest of the ingredients. Make sure eggs are mixed in good. Pour into ice cream maker and let run until thickened. Enjoy and try not to eat it all at once:)
If you don’t own an ice cream maker, you should add one to your Christmas list. I LOVE mine!
