3 new babies:)

My cat Lyla had her babies while we were in Florida! She had three little cuties and she is being such a good mama 🙂 Now time to schedule a spaying!

I have had a VERY hard time getting back to real life since arriving home on Sunday afternoon–hence the no blogging. I want to say ‘THANK YOU’ for the supportive comments on my last post.

My vacation was total bliss but my tummy ended up a WRECK!! We ate out way more than I anticipated and even though I tried to eat ‘safe’ foods, you just never know what you are truly getting when eating out. I did however find a really cool place called Cosimos that had a full gluten free menu. I thought I had died and gone to heaven! Look what I got:

This was by far the best meal I had while on vacation! I really splurged here with grains and dairy, but by this point, my gut was rebelling against everything I ate. So, I figured why not enjoy it 8) Hubby and I ate the leftover pizza for lunch the next day before hitting the road.

 We really had such a great time and I am SO thankful we had the opportunity to go. But, back to real life means back to work so I better scoot.

Hello again from Florida! We are having a great time and really getting some much needed R&R 😉

This post isn’t really about Florida though. It’s about my heart and a confession that I must get off of my chest. Are you ready? 🙂 I am SO TIRED of trying to eat a certain way!! After reading this post by Katie the other day, I had to do some soul searching. I have been struggling for a while now with this whole ‘good’ food, ‘bad’ food thing! I am all happy if I eat ‘good’ foods, but OVERWHELMED with guilt if I eat ‘bad’ foods. I have struggled with food for YEARS and I’m tellin’ ya, it is exhausting! It is certainly not ‘Living Free’!!

So, this morning, I had to spend a good long time talking to God about this. I know in  my head that He loves me even if I eat a brownie and ice cream, but in my heart I always feel guilt. That is NOT guilt from HIM, it is guilt I am putting on myself and I have to learn to STOP!! As Katie said, ‘Diet is NOT a religion.’ AMEN sister!! If diet is the most important thing to me, then what does that say about my relationship with God–umm, not good. I’ve also really enjoyed seeing Heather letting go of some food rules due to pregnancy. I am NOT pregnant, but I DO need to let go of some food rules! It is SO helpful to me to see that other bloggers sometimes eat what a lot of people would label as ‘bad’ foods and they didn’t die or turn into blimps! Check out Heather’s guest post on Maggie’s blog!

TODAY my main goal will be whether I am pleasing GOD and enjoying the life He has given me–NOT whether I am eating perfectly or not. Believe me, it is HARD to eat perfectly at home, much less on vacation 😉 I am praying that God will help me be balanced in my thinking about my body image and balanced in my eating. I think I honeslty don’t know what that looks like most of the time. Usually, if I am eating really healthy, it is because I am forcing myself to do it–it’s more of a performance mentality or fear of getting fat!  Note added: I don’t mean to sound as if I don’t enjoy anything healthy 🙂 There are all kinds of healthy foods that I don’t have to force myself to eat. I just mean that sometimes I choose something because I think it is healthier when I really would rather have something else. Make sense?

So, there you have it–honesty as it’s best worst. How do you keep balance in your eating and body image? Really, I need some tips 😉 Eating healthy, exercising and staying fit have never been about balance for me and I really need to change that!

HI all my bloggy friends!! I’m so glad I finally figured out how to get on my blog. I tried last night and had trouble logging in. I am in Florida and using someone else’s computer. Therefore, pictures will have to wait until I get home 😦  That’s a shame because I had a wonderful meal at none other than Whole Foods yesterday! If you don’t know already, we don’t have a Whole Foods anywhere near where I live so it’s a real treat when I get to go to one.

We arrived here yesterday around 1:30pm. We drove as far as we could on Friday until hubby got too tired. We stayed in a little rinky dink motel and started again the next day. On the way down Friday, we ate at Mcallister’s. I got a salad with grilled chicken, cranberries, almonds etc. It was REALLY good!

Yesterday, my eating got screwed up a little just because of wanting to get here. We basically skipped lunch which is never good. By the time we ate, I was starving to say the least! That’s where Whole Foods came into the picture! Just for record, my meal weighed in more than my hubby’s! Told ya I was starving!! We then had to go grocery shopping. I did get a few goodies at WF but not anything to feed us for the week. It’s so funny when hubby and I go grocery shopping together. We eat totally different! So, I pretty much get everything I need (a.k.a. LOTS of veggies and some fruit) and then he picks out what he wants (a.k.a. frozen pizza, chicken patties etc.) He did say he was going to eat salads with me for lunch though, so that’s a start 🙂

After getting settled a little, we headed to watch the sunset on the beach. It was breathtaking!!  Can’t wait to show you all the pictures that we will have by the time we get home!

I got up and went for a walk/run this morning while he is enjoying some much needed rest. He’s still sleeping–hence the time on the computer for me. I think I need to get out earlier tomorrow morning, because I’m tellin’ ya the humidity will get ya! I was SO tempted to take my shirt off!!

I’m getting ready to go have a green smoothie minus the greens! Spinach is a long lost friend now due to it’s HIGH oxalate levels, but I can still have a green smoothie. I’m using pure, raw, dark green spirulina powder. My kids say the powder is so dark it looks black! It is very good for you, high in protein and chlorophyll. I plan on sharing more about this smoothie at another time.

Well, hubby is awake and that’s my cue to get off of here. I’ll be updating while here, but like I said–no pics until I get back. Sorry about that! I tried everything I knew last night and could not get it to work. I think I need to have the software for my camera on this computer and I don’t.

Whew! I had a busy weekend! How about you? Saturday we went to my father-in-laws 60th birthday party–no pics–forgot camera. I had a good time, but ate things I shouldn’t have. Hey, my belly was already a wreck so I took my meds and went for it. Sunday was a potluck after church. I did NOT cheat that day–yay for me. I only had a little salad and had something else when I got home. 

As busy as my weekend was, my week is about to explode into major busyness. I have a busy work week, but the best part is that my middle son is turning 18!! My other two are 19 and 14! Good grief I feel SO old!! We are having to put off the party for a bit though because… 

My hubby and I are leaving Friday for our 2oth anniversary/2nd honeymoon!!! We will be gone for a whole week with no teen drama, no work, just lying around on the beach and relaxing. We are planning a big birthday bash for when we get back. I am SO looking forward to a vacation. I’m sure I will miss my youngin’s terribly though!! It will be weird to not have them around. My husband and I have never gone anywhere for a week without them–except once (went to Nashville and met Heather) and that wasn’t really a vacation for the hubby because it was for work. I on the other hand had a great time–HI HEATHER 🙂 

Okay, so on to food. I am back into sprouting! 

 

I experimented with sprouting some last year and thought it was pretty cool and easy. But, the main reason I did it was for digestion.  I am SO stubborn that I just keep trying grains and they just keep NOT working. I am sprouting some quinoa, buckwheat and oat grouts to see if I can handle sprouted grains any better. Not sure if it’s going to work though. I’m also sprouting mung beans and broccoli sprouts. 

Remember the buckwheat pancakes I used for bread the other day? Well, I had the pancakes for breakfast the next morning.

 Buckwheat is not technically a grain but my belly did NOT appreciate this! Sad 😦 And, I have also realized that I may need to go on a low oxalate diet to help my female issues. I’m waiting to hear back from my ND as to whether this is something I need to try. Believe me, I don’t want to do it if it isn’t absolutely necessary. I don’t want to go into a lot of detail, but some of my main foods that I depend on are VERY high oxalate–like spinach, almonds/almond milk, stevia and chocolate–heaven forbid!! There may be some major changes to my diet coming soon, but I am choosing to just focus on today 😉 Worrying about what may be coming is a waste of my energy.

I have been having a blast lately! If any of you read Heather’s blog, you know by now that I was in Nashville last week.  What a TREAT! My hubby had to go to some classes for his job and I got to tag along. This is the first time since having kids that we got away for a whole week–alone:)

I’m glad to be home, but reality hit just a little too fast.

While I was away, I decided to relax more about my food–a.k.a. less raw.  I think the season is changing where my diet is concerned. Today, I ate about 50/50–raw/cooked. I’m just trying to have a healthy relationship with food–whatever that looks like. I realized while I was away how many ‘rules’ I have been trying to follow. Why do I have to be such a rule person?! So, trying to relax and rethink some things about my diet. One thing I DO know for sure is that I HAVE to stay away from sugar!! I ate too much while I was gone and it REALLY got to me. I also ate more grains and was feeling really out of sorts by the end of the week. That really makes me sad–no matter how much I try to tell my body that it likes grains–it just won’t listen!!

Tried a new dish for dinner tonight but will have to share that later. This turned out to be really long. Hope you enjoy the pics.

I just got home from a 4 night camping trip yesterday. Our family had a wonderful time despite getting rained on some. Before leaving for the trip I made sure I planned well for all my meals. The last time I went camping a couple of years ago I did NOT stay gluten free and I paid dearly for it. So, I wanted to share some of the things that made this trip much more enjoyable and safe. I think most gluten free people realize the importance of menu planning. My first task was to think of things that would travel well and be easy to fix. I took some of my Heaven on Earth Chocolate Muffins. These were nice to have handy, but I must say they are better eaten when they are first made. I also took black bean burgers that I made ahead of time. These were really good and I will hopefully be posting the recipe soon. I had the burger on a gluten free english muffin with a sweet potato that was wrapped in foil and cooked on the grill for about an hour. This was probably the best meal I had while camping. I also bought an eggplant and a vidalia onion to fix on the grill. I sliced the eggplant about a half an inch thick and sliced the onion. I am developing a very strong liking for eggplant! The grilled veggies were SO good on a GF english muffin. I took homemade GF bread for sandwiches and took quinoa and GF oatmeal for breakfast. I did have a camping stove so I could make my breakfast easily. I am happy to say I did not feel deprived once the whole time we were camping! My family even had smores which used to really get to me, but I didn’t even crave one this time! I am learning that the more variety and satisfaction I have in my diet, the less I crave “forbidden” foods. Now that we are home, I need to make a menu for the rest of this week and go to the store. Planning is the key for me!
