While we were in Florida last week, my hubby ordered something that I was VERY skeptical about. I told him I don’t know how many times that he probably shouldn’t have ordered it, but the deed was already done. I was thinking there is NO WAY I would use what he ordered–until today. What I am referring to is the P90X system! Now, before you say I’m stupid let me just say that after watching a couple of the workouts, I am pleasantly surprised! Before watching, I was thinking this is going to be WAY too hard core for me. Also, how would I get my love of yoga in, and what if I couldn’t do it or if I push too hard. Well, from what I watched it IS pretty hard core, BUT Tony Horton stresses to do what you can and that’s enough! I like him better already 🙂 One of the things I am MOST excited about is he uses A LOT of YOGA–YEEESSS!!!! Even in the Cardio x, there were sun salutations. 

Another reason I am willing to give this a shot is to have something my hubby and I can work towards together. AND, honestly, I have been in an exercise rut lately. We are hoping to start on Monday, so if you don’t hear anything from me after that–you’ll know I died–lol!!

Changing the subject now, have you ever woke up starving but NOTHING sounded good? That happened to me this morning! I went to the fridge about a dozen times trying to see if anything seemed like it would hit the spot and–nothing. I finally just decided to go with a regular breakfast of eggs and yogurt even though I wasn’t really feeling it.

That was all fine and good but about two hours later I needed 2nd breakfast.

Since I am not doing spinach any more due to oxalates, I have been making green smoothies with pure spirulina powder. My life without spinach isn’t so bad afterall 🙂 I usually use water, 1 cup fruit, 1 Tbs. ground flax, sunflower seeds, maca powder, spirulina and raw stevia–yummy, and holds me for hours–usually. I have been drinking this and lots of fresh veggie juice since I have been home from vacation and it is really good for my tummy.

Oh, and look what I found at the health food store yesterday–SO excited!

Gluten/Dairy Free Burrito!

I know, it doesn’t take much to excite me! Sometimes I just crave a good burrito! This didn’t stay together very well when I cooked it, but it hit the spot!

I LOVE the Raw Revlolution bars but it takes me days to eat one. The mini ones are perfect!

Hi everyone! I can’t believe it has been at least a week and a half since I last posted!! Man, time flies when your having fun busy. This post may be a little random because I have several things to share that are not related to each other at all 🙂

The first bit of interesting news is that I got my ears pierced stapled! No, I am not some kind of hippy or anything. These staples are a form of acupuncture that you leave in. You can read about it here.

If you read about ear stapling, you would see that a lot of people do it to try to lose weight. That is NOT why I had it done. It is not just for weight loss. My ND recommended it to help balance my hormones and energy and to help with sugar cravings. She obviously thought it would be very beneficial to me because she did it for FREE! I probably wouldn’t have had it done if I had to pay for it, but I figure if it’s free it’s not going to hurt to try. At least I know she wasn’t just trying to sell me something 🙂 Speaking of hurting, you may be wondering if it hurt. Umm, yeah! Not extrememly bad pain, but enough. It hurt worse after it was over and they (I have one in each ear) were very tender for several days. The worst part was when I would forget they were there and go to scratch my ear! NOT good! I also had some trouble sleeping with them in the first couple of nights.

So, today is day seven since having this done and what have I noticed? The first thing I noticed was a decrease in depression! That alone is fabulous! Then I started to notice an increase in energy–woohoo! I kept wondering when the sugar cravings would improve. The first few days I could still be very tempted by sugar.  On about day 4, I noticed a dramatic improvement in my cravings! THAT IS A MIRACLE!!  You guys probably have NO idea the struggles I have had with sugar cravings. That’s not something I really talk about on my blog. All in all, I think the staples are helping me and it was worth the momentary pain 🙂

Okay, enough about my ears! I have been following a low-carb diet due to candida and I was SO excited to find this new protein powder yesterday!

This is Healthy N’ Fit protein powder and it is 100% egg white protein. What made me so excited about this powder is the fact that it only has stevia in it for a sweetener. So many other protein powders still have fructose etc. in them! It is also loaded with amino acids. How does it taste? YUMMY!! I had my first smoothie with it this afternoon.

This is a spinach smoothie with almond milk, a few frozen cranberries and 1/2 cup plain unsweetened yogurt added in. Perfect! Now, I know there are a lot of Jay Robb fans (Hi Heather🙂 out there, but this stuff is cheaper! At my Kroger, Jay Robb is $22.00 for 10 servings. The Healthy N’ Fit was $35.00 for 34 servings!! I have to go with the cheaper! I have never tasted Jay Robb due to the cost, but I really felt like this was worth it.

I have been feeling great on a low-carb diet (and the staples:)! I am doing yoga some and some other workouts–like the FIRM. I really want to feel stronger! I think I am what a lot of people would call ‘skinny fat’. I’m at a low weight, but don’t have a lot of muscle. Hopefully, my diet and exercising will help me gain some of the muscle I lost when I was struggling with an eating disorder. I have been thinking about doing the P90X workouts. I’m not trying to get ‘ripped’ or anything, just stronger with less fat and more muscle. Anybody ever done those? What were your thoughts? I really don’t want to kill myself! I am also wondering if I do harder workouts, will it make my weight go up due to gaining muscle. If it does, that’s okay, as long as I know it’s from muscle and not overeating or gaining fat! Would appreciate your input 😉

This post is getting pretty long, but Clare gave me a sweet blog award about two weeks ago and I am just now getting to it!! Terrible, I know! I am supposed to tell 7 random things about myself so here goes.

1-I am pretty OCD about some things but not others. For ex. I HATE crooked pics, open cabinet doors and I CAN NOT buy something that is dented!! But, as for keeping my house spotless–I gave up on that years ago!!

2-I have homeschooled my (3) children most of their lives. MANY ups and downs on that one–mostly ups though 😉

3- I LOVE animals!! We have three dogs, two cats and two turtles (those are my daughter’s) I think she loves animals even more than me!

4-I am a book addict!! Mostly cookbooks, as you know if you have been reading my blog long.

5-I LOVE fried okra, but sadly can’t eat it anymore! Hey, maybe I can make it and coat it in almond flour!

6- I HATE beets and kombucha!

7-I was born three days before my brother’s first birthday. I bet he thought that was the WORST present EVER!

blog pictures 835I tried a new grain free concoction yesterday. I found this recipe on the SCD web-site and then changed a few things. I have never really thought to put apples and egg together before, but really liked it. You can find the original recipe here. Here is what I did though:)

–cooked 1 green apple cut into small pieces (cooked in a little coconut oil-I also added a little water to the pan to help soften up the apple)

–added cinnamon and 1/4 tsp stevia

–after apple cooked until soft, I added 2 eggs and scrambled it all together

–when done, place in bowl and top with a dollop of yogurt and pecans

Another favorite of mine lately is this:

Coconut milk yogurt w/ frozen berries and pecan piecesI have been loving homemade coconut milk yogurt with frozen cherries and blueberries and then topped with pecan pieces. All I need to say about this is–YUM!

I did get to go skating last night. I still didn’t feel the best, so I would skate a little and rest a lot! Had a good time with my kids and hubby though.

Oh, this was pretty funny. When we paid to go in and I was letting the lady put the arm bracelet on me, she said “You’re going to be brave and try to skate?” Uh, hello–I may be 40, but I’m NOT dead yet!! I DO know how to skate. The most challenging part of the skating was having to go to the bathroom–with skates on:)! My mom’s friend said I must be having a really hard time turning 40 because I wanted to go skating! What is wrong with these people? Am I supposed to stop having fun just because I turned 40? Good grief!!

Hope you all had a fabulous weekend! Did you do anything fun? I’m learning that life goes by too fast to not enjoy it!

Hello all you lovely bloggers/readers! First of all, I am officially 40!! My B-day wasn’t exactly what I had planned because I woke up with a TERRIBLE bladder infection! Wow–talk about PAIN ALL day long! But, I was able to go to a really cool vegetarian restaurant for dinner. By the way, this post will be picture-less because my camera battery is DEAD and I didn’t realize it until it was too late to charge it:( Anyway, I was a little a lot concerned about my hubby going to this veggie place. He is all about the meat and tators! After looking the menu over, he decided to get grilled Salmon with asparagus and roasted sweet potatoes–there’s his tators. He ended up LOVING it!! He just went on and on about how yummy it was. Well, he didn’t exactly use the word ‘yummy’, but he raved about it none the less. I got a tofu and veggie dish that was to die for! The waitress made sure it was gluten free and I ordered it without the rice. It had this amazing sauce that had kind of a peanutty taste but was a little spicy too. All I can say is YUM! I thought I might try to recreate a dish similar to this at home. I’m pretty sure Heather has a sauce recipe that would be great–like tahini:)

Okay, on to the ‘I think I’ve got it’ part of my post. I have been taking a break from blogging a bit lately. Part of my reason was to have more time for other things, but I have also really been trying to figure out what works for my body. Sometimes, when reading a lot of other blogs, I can get a little sidetracked from what is best for ME. I tend to follow the crowd more times than not and it was getting me in trouble. So, after less blogging/reading, I think I have a semi-plan that will work for ME. Here are the basics:

1- I have finally accepted the fact that my body can NOT handle grains of any kind! I know grains are not bad themselves and carbs are not bad. But, MY body does NOT like them no matter how much I tried to make it conform to what I wanted! Therefore, I am now on a totally grain free diet. I could tell a difference in TWO days of cutting them out:)

2- I have also learned that I can not do sugar of any kind–no agave, honey, etc. I have only been using Stevia and am a-okay:) I can have really dark chocolate though!!:) YeeHaa!

3- Fruits: cherries, blueberries, strawberries–okay all berries, green apples(tart), and very small amounts of banana every few days.

4-Veggies: all veggies except potatoes, yams, and corn. Do NOT do well with starches! Veggie choices are endless and I LOVE trying new ones!! Still juicing some and making sure I eat some raw veggies every day.

5-Dairy: the jury is still out on dairy! I have started introducing homemade yogurt that is fermented 24 hours the SCD way. Once it ferments that long it is virtually lactose free. I do a little Parmesan and other than that, that’s about it for now. I have mostly been making homemade coconut milk yogurt, but hopefully can handle the organic cow milk some too.

6-Protein: I have decided that a vegetarian diet is what feels best to me. I will have eggs occasionally because I feel like my body needs them. I have been back and forth about the whole soy debate and have decided that a little soy once or twice a week should be fine. I also do really well with beans that have been soaked 24 hours and had the water changed several times during the soaking. Soaking breaks down a lot of the starches and they are a good source of protein.

7-Nuts and seeds: Nuts and seeds are also good sources of protein. I have found that I can do pecans and a smidgen of almond butter every now and then. I can make grain free bread from pecan flour that is really yummy! I also do well with sunflower and pumpkin seeds–and of course, LOVE sunbutter!

8-Fats: nuts/seeds, coconut milk, coconut oil, olive oil

9-Exercise: Can’t forget exercise! Yoga is what I LOVE best, but have found that I also like doing walking/running intervals. Nothing too long or strenuous, but enough to get my heart pumping. Usually, thirty minutes on the treadmill 3-4 days a week is what feels best to me. More than that really seems to bring me down physically.

I think that about covers it! I know this was really long, but it helps me to get it on ‘paper’. Hopefully, I will start posting some yummy grain free recipes soon:) Have a lovely weekend! I’m hoping I get to go skating tonight since I didn’t feel like it on my B-day.

This blueberry frozen yogurt was my dessert after doing about 70 minutes of HOT yoga (at home) and then later going for a 3 mile walk. Whew! This was inspired by Polly’s “bloothie” that I saw on her blog today. Thanks Polly:)

1-1/2 cups frozen blueberries

4Tbs. vanilla protein powder

1 Tbs. raw honey

1 tsp. guar gum

I usually try not to use sweeteners, but I was using hemp protein powder and I thought it might need some help:) I put all ingredients in the food processor and blended until smooth. Then processed in ice cream maker until thick and creamy. You could definitely use a different protein powder, I know a lot of people don’t like hemp. This made two servings.

Okay, today was a SAD day indeed! See this jar? Do you know what goes in that jar? OATGURT!! Notice, it is EMPTY:(

I am also O-U-T of spinach! Heaven forbid!! Oatgurt and spinach shortage on the same day! And, I was going to challenge myself to not eat sunbutter today. THAT DID NOT WORK!  Do you know where I’m going tomorrow? Yep, grocery shopping to get lots of yummy green spinach and I have oatgurt fermenting as I type:) I guess I might survive after all. For now, I am going to chill out as I have been rather HOT today:)

I am going to try to keep this short and sweet today:) I have another HUGE cleaning day ahead of me. It has been another really hard work week and I’ll be SO glad when today is over. Tomorrow, I am going to the pool and vegging out!!

I wanted to share the recipe I use to make coconut milk yogurt. I’m not even sure where exactly I found this recipe–somewhere online.

blog pictures 470First of all, let me tell you that cheaper is NOT always better! The coconut milk I got at the Asain Market (the Renuka) for so much cheaper–not so good. It was pretty watery and it had kind of a grayish tint to it. I read in my coconut oil book that milk that color was not made with the best and freshest coconuts. Basically, it’s made with the coconuts that are left after all the best are picked over. Eeeww! I have tried several different brands of coconut milk and the THAI brand is the best. I have also found that the full fat stuff works the best. I tried the light when I was having a temporary relapse in my fear of fat:) Didn’t taste bad–just much runnier. Coconut milk yogurt will always be pretty runny though. I mostly use it for smoothies or over frozen fruit. Yummy!blog pictures 434To make the yogurt you will need three cans of good coconut milk (aka. not the cheap stuff:) I can only use two cans because my yogurt maker won’t hold a jar big enough for three. Anyway, warm your milk to about 125 degrees. I don’t really worry too much about getting it that hot. As long as it’s at least 100 degrees, you will be fine. If you do get it to 125, you need to let it cool to about 100 before adding in your starter. If your milk is too hot, it will kill your starter and then your yogurt would be lacking in good bacteria.

Next, you need to add 1-2Tbs. of honey. This is to give the good bacteria something to ‘feed’ on. If you forget to do this–well, you won’t have yogurt!

After the milk is cooled enough, take out about 1/2 cup and place in a small bowl. To that, add 1/4 cup good quality yogurt. Something like Dannon all natural plain unsweetened is good. Mix the ‘starter’ yogurt into the 1/2 cup coconut milk. Then you can pour this back into the rest of your coconut milk. Stir a little and you are ready to pour into your jar. Make sure the jar is sterile.

blog pictures 471You are now ready to place the yogurt into the yogurt maker.

blog pictures 472Having a yogurt maker is by far the easiest way to ferment the yogurt, but you can do it without one. I have read that a lot of people place it in their oven and leave the light on. I have also used a dehydrator before when I was making a lot of yogurt at one time. I was on the Specific Carbohydrate Diet for a while and was making 4 quarts at a time like that. The main goal is to keep the yogurt between 100-110 degrees for 24-26 hours.

After 24-26 hours, place the yogurt in the fridge for a good while. I usually do it to where mine is ready to go in the fridge before bed and let it chill overnight. Making yogurt is NOT hard. You just really have to make sure the temp. is kept in right range.

This may be a lengthy post–so hang on to your hats:)

Today has been an interesting day. I woke up at 4:30am with my tummy still rebelling from something. The key word there is ‘something’! By 6am, I was starving! So, I had some ice cream. Ice cream for breakfast is always a good thing and this ice cream was SO healthy–I didn’t even have to feel guilty.

blog pictures 448This was inspired by Heather’s green ice cream. I don’t remember exactly what I put in mine. I know it had coconut milk, coconut milk yogurt, spinach, PlantFusion protein powder, carob, honey and guar gum. When I got it out of the ice cream maker, I thought it looked just like mud! Well, it certainly didn’t taste like mud. I had it for dinner last night because I didn’t feel like eating anything else and then had it again this morning.

With my ice cream breakfast, I also had my sprouted bread that I mentioned in the last post. Sorry, no picture! I had to put it promptly in the freezer to keep from gorging on it. It was THE BEST gluten free bread I have EVER made!! I have read that soaking grains makes them taste better and boy am I a believer! I am now experimenting with a fermented (kind of like sourdough) gluten free bread. Guess what I’m using for the ‘sourdough’ starter–OATGURT! WooHoo:) I am trying to get away from using tapioca and arrowroot starch. The fermented bread doesn’t have startches like that. It is also yeast, dairy and egg free–without me having to tweak it. Now, that’s amazing! Here is the link for the soaked bread that I ate this morning.

Gluten Free Sprouted/Soaked Multi-Grain Bread

I had an appointment with my nutritionist today. It was pretty depressing. Basically, she doesn’t know what to tell me anymore. It’s NOT her fault. My body just has a mind of it’s own and it doesn’t want to co-operate. She has told me everything she knows to tell me, and well, things just aren’t working. My food diaries are not very helpful these days because most of the time, there is no rhyme or reason for my pain.  The only good news was that I have maintained my weight since my last visit. So, after THREE years of her trying to walk me through my eating disorder and my Celiac and other food allergies, I walked out without making another appointment. I have been a HARD case for her! I walked out feeling like a hopeless case–BUT I CAN’T let myself stay there! So, what did I do?

blog pictures 452I bought a book:) Have I ever told you what a SUCKER I am for books? Well, I LOVE books! Unfortunately, that is what I want to buy when I’m feeling bummed out. Now, you may be asking yourself why on earth I bought a raw food book. Good question:) Am I going raw? No. I bought it because it talks a lot about fermenting and soaking and sprouting. I am ALL into that these days! Plus, it has really pretty pictures! I love books with pretty pictures even more than boring books:) My hubby will probably shoot me when he sees it, but I figure with all the money I’m going to save by not going to the nutritionist–Hey, this is cheap! By the way, if you are interested in the raw diet, you should check out LovIN my tummy!
