I finally found kabocha squash! I have been meaning to go to the Asian market for over a week now and I finally made it today. I was SO happy! The funny part was, I couldn’t read half of what I was looking at! I also found coconuts, mung beans, and coconut milk(at least I knew what those were:). The coconut milk is what I use to make my yogurt. I couldn’t believe how cheap it was at the Asian Market. It was only $1.49 a can. I pay over $2.00 a can at Kroger. WooHoo. I know where I’ll be visiting more often.
I’ve had some pretty yummy eats today!
My day started off with my usual green smoothie:) I keep thinking I might do something else for breakfast, but then I think–why? I love green smoothies!
For lunch, I packed some Guacamole Chicken Salad and had it over raw spinach. I am praying that my tummy behaves itself with eating raw. I need salads! Raw hasn’t worked for me for a while, but maybe-just maybe-today will be different.
For snack (#1), I had a sunbutter bar. These are gluten, nut, egg, dairy and everything else free but they are yummy for my tummy!For snack(#2), I had 1/3 cup oatgurt in the bottom of my almost empty sunbutter jar. I don’t always need two snacks in the afternoon. When I clean two houses in one day, I get really hungry though!
All gone! That is SO NOT fair:) I don’t even have another jar!
I bet you can’t guess what I’m going to have for dinner? I will definitely be trying that squash everyone has been raving about:) I will probably have one of my veggie/bean burgers that I made the other day.
Now, I have two coconuts to deal with. I have never bought fresh coconut before but can’t wait to try it. I will most likely recruit the hubby to help. What are your favorite ways to use coconut?

I love drinking the coconut water and then using the flesh to make raw ice-cream.
I’ve been looking for that squash and haven’t been able to find it! I can’t wait to see what you think of it!

Yeah, the oatgurt in the sunbutter jar was such a treat! I need to go buy more sunbutter TODAY:) I can’t find it without cane juice. Do they sell it like that? I have really been wanting to find it if they do.

By any chance, does the kobacha have a label of its country of origin? I’m trying to buy more local produce or produce grown in North America and was a bit surprised that a lot of the fruit and veggies in the Asian markets were not labeled. I always thought food had to have labels, but I guess not. I just shared some thoughts about an eye-opening trip to my local Asian market:
