I have had a couple of people ask about the recipe for the coconut flour bread that I am eating these days so I thought I would post it today. I originally found the recipe at Life As A Plate. I just found this blog not long ago and I am ever so glad that I did! I have made several changes though and thought I would show you what I do. Actually, my daughter usually makes this for me 😉 I think I’ve only made it once.
I didn’t change much from the original recipe but I needed it to be dairy free. I used to use real organic butter in the bread before I realized I needed to cut out dairy. It was SUPER yummy with real butter! Now, I am using Earth Balance dairy free/soy free butter. It’s good that way too. Anyway, here is the recipe my daughter makes for me:
3/4 cup coconut flour
1/4 cup flax meal
2 Tbs. arrowroot
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. onion powder
1/8 cup sesame seeds (I leave these out due to tummy)
7 eggs (you can get away with only 6 eggs)
1/4 cup melted butter or coconut oil (original recipe calls for 1/2 c.)
2 Tbs. full fat coconut milk (original recipe calls for sour cream)
Combine dry ingredients except 1 Tbs. sesame seeds if using.
Combine eggs and coconut milk (or sour cream) and beat into dry mix~then add butter or coconut oil.
Pour into greased loaf pan and sprinkle with remaining 1 Tbs. sesame seeds if using. I use a small loaf pan~not a regular size but not mini loaf either~not sure what size mine is exactly because I’ve never measured it 🙂
Bake @ 325 for 40 minutes. I always cover mine with foil after the first 15 minutes to keep top from burning but your oven may be different than mine.
Let cool in pan for a bit then take out of pan and cool the rest of the way on cooling rack. Slice and enjoy! A BIG thank you to Life As A Plate~this bread has changed my life! 🙂
Okay, now I have a small confession to make. I ‘cheated’ on my ‘diet’ last night! I ate a couple of things I wasn’t supposed to! Cereal has always been one of my favorite foods and when I’m tired and don’t feel like making anything else, I WANT CEREAL!! Why am I telling you this? Because I don’t want people to think that I have it all together and I never cheat!! I am not always the best at doing what I’m told to do to better my health 😉 I WANT to stick to the ‘diet’ that has been prescribed for me, but sometimes, I’m weak and cave. Any tips you may have would be greatly appreciated! 🙂

So, I just made this bread and it is delicious, however mine turned out about half the size of yours. I did use cornstarch instead of arrowroot powder (b/c I didn’t have any), is this why? Could I have done something else wrong? Thanks!

I really like this coconut flour bread. I use the 7 eggs and organic sour cream that is called for in the recipe. I bake it in a medium sized loaf pan. Great for sandwiches and grilled cheese. Thank you for sharing the recipe!
A good mistake: I make this bread weekly as it has become one of my favs. Coconut flour can be tricky to work with and I find making adjustments can make the world of difference. I made this mistake because I was short on my coconut flour. The recipe calls for 3/4 cup of coconut flour and I add it into the recipe 1/4 cup at a time. Yesterday, when I was adding the last 1/4 cup I was short on the coconut flour….I only had 1/2 of the 1/4 (which is 1/8). So to make up the difference I added 1/8 of a cup of whey protein powder. I found the bread rose slightly higher and was less dense. I have decided I like the recipe much better taking out an 1/8 of a cup of coconut flour and replacing it with whey protein powder.

Made it again and still got a 1″ high loaf that was very dense and looks nothing the one you have made….might give this one a miss….sorry 😦
Hi Rhonda, Are you using eggs at room temp? Are you hand blending or mixing with a blender..magic bullet? You may have to lower your soda content or you may need to wait 15 minutes after mixing before you place into your oven…you can always preheat to 150, place in oven for 5 min and then go to 350-375.
Perhaps these aren’t worth trying but I would …this is a yummy change.

Hello! I have tried a few different recipes for coconut flour bread and found that they are too “eggy”. This one calls for alot of eggs also. Can anyone tell me if this is the case with this bread as well?? Thanks!
Hi I don’t have arrowroot and I want to use corn starch but I want to know if I can replace it with the same amount or if I should use less. I don’t want a super thick and dense bread but I do want it to rise and be fluffy if possible
